It’s crazy how quickly the holidays just flew by and now it’s a new year and I can already see from my traffic that we are officially in the season of lower-carb and healthier recipes as we try to reset after all the holiday indulgences! My Chicken Broccoli Cauliflower Casserole is one of the most popular recipes on the site so I decided to make another version.
This cauliflower casserole is a great way to satisfy your cravings for a loaded baked potato without all the heaviness. I added chicken to this so it was more of standalone meal and it did not disappoint!
To make Loaded Chicken Cauliflower Casserole, you will need:
- frozen cauliflower rice
- olive oil
- boneless chicken breasts
- garlic powder
- onion powder
- salt
- paprika
- sour cream
- turkey bacon
- cheddar cheese
- chives (for garnish)
Recipe Tips and Suggestions:
- Make sure you take the added step to drain the cauliflower rice as you don’t want a watery casserole. I first heated the cauliflower rice in a skillet until it was lightly browned to first burn off some of the liquid. Then I drained it in a colander and pressed down with a spatula.
- You can also add broccoli, spinach, or other veggies if you’d like to make this dish even more nutritious!
- I browned some chicken breast for this, but you could also use ground beef, chicken, or turkey, or even roasted chicken.
