Happy New Year! It’s crazy how quickly the holidays just flew by and now it’s a new year and I can already see from my traffic that we are officially in the season of lower-carb and healthier recipes as we try to reset after all the holiday indulgences! My Chicken Broccoli Cauliflower Casserole is one of the most popular recipes on the site so I decided to make another version.

This cauliflower casserole is a great way to satisfy your cravings for a loaded baked potato without all the heaviness. I added chicken to this so it was more of standalone meal and it did not disappoint!

To make Loaded Chicken Cauliflower Casserole, you will need:

  • frozen cauliflower rice
  • olive oil
  • boneless chicken breasts
  • garlic powder
  • onion powder
  • salt
  • paprika
  • sour cream
  • turkey bacon
  • cheddar cheese
  • chives (for garnish)

Recipe Tips and Suggestions:

  • Make sure you take the added step to drain the cauliflower rice as you don’t want a watery casserole. I first heated the cauliflower rice in a skillet until it was lightly browned to first burn off some of the liquid. Then I drained it in a colander and pressed down with a spatula.
  • You can also add broccoli, spinach, or other veggies if you’d like to make this dish even more nutritious! 
  • I browned some chicken breast for this, but you could also use ground beef, chicken, or turkey, or even roasted chicken.

Loaded Chicken Cauliflower Casserole

Loaded Chicken Cauliflower Casserole - This tasty low-carb casserole is a great alternative to a potato and has tons of flavor and is easy to make!

Ingredients

  • 20 ounces frozen cauliflower rice
  • 1 pound boneless chicken breasts, diced into bite-size pieces
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon salt, divided
  • 1 teaspoon garlic powder, divided
  • 1 teaspoon onion powder, divided
  • 1 teaspoon paprika
  • 2/3 cup reduced fat sour cream
  • 1 1/2 cups freshly grated cheddar cheese
  • 5 slices turkey bacon, cooked and crumbled
  • fresh chives

Instructions

  1. Heat a medium skillet over medium heat. Heat cauliflower rice according to package directions. Let the rice start to brown (to burn off some of the released water). Remove from the heat and transfer to a colander. Leave over sink or larger bowl to drain additional liquid.
  2. Preheat oven to 350 degrees F. Add the olive oil to the skillet and heat. Add the diced chicken breast. Season with 1/2 teaspoon of salt, 1/2 teaspoon of garlic powder, 1/2 teaspoon onion powder, and the paprika. Cook the chicken for about 6-8 minutes or until the chicken is browned and cooked through.
  3. Spray an 9x9 baking dish with cooking spray and set aside. Return to the colander with the cauliflower rice. Take a large spatula and push down on the rice to drain any remaining liquid.
  4. Add the drained rice to a mixing bowl along with the chicken, sour cream, 1 cup of the cheddar cheese, and 3 slices worth of the crumbled turkey bacon. Season with 1/2 teaspoon of salt, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder. Stir until well-combined.
  5. Transfer the mixture to the baking dish. Sprinkle the remaining cheese on top along with the remaining bacon. Cover with foil and bake for approximately 20 minutes or until the cheese is fully melted and the casserole is warm all the way through. Garnish with freshly chopped chives or green onion.
