It’s January and that time of the year when many of us are living that holiday detox and new year resolution life. Last year was not kind to me for a number of reasons, but I’m definitely feeling a stronger dedication to living a healthier life in 2021. Limiting heavy carbs is usually one of the first things I try to change when wanting to clean up my diet.
It’s been a while since I did a round up and since I’m always making new recipes, I thought I’d share some of my favorite lower-carb recipes that I’ve been making lately. This roundup includes both main dishes and side dishes. All of these recipes are great dinner options packed with veggies and simple, natural ingredients!
Some things to note:
Some of the photos may have rice in them, but you can swap that out for cauli rice or veggies.
A couple of the recipes may contain a bit of flour for thickening. If you are avoiding all flour, you can swap it out for lower-carb thickeners like arrowroot powder or leave it out.
Depending on the specific diet, beans may not always be considered low-carb. For example, beans are not recommended in a keto diet. If you are avoiding beans, you can swap them out in these recipes for black soybeans.
For some of the recipes photographed with tortillas, swap those out and serve over cauli rice, salad, or over veggies for low-carb burrito bowls! You can also use lower-carb tortillas, again, it just depends on your diet! Meal prep and change it up!
