I cannot believe that Christmas is somehow just a week away, but here we are! When it comes to Christmas morning breakfast, I want something super easy that I can just pop into the oven so we can focus on opening presents. Overnight french toast is always an excellent option for such an occasion and can feed a large group. This gingerbread french toast is the perfect holiday breakfast to serve!

To make Overnight Gingerbread French Toast, you will need:

  • a loaf of brioche bread
  • eggs
  • milk
  • half and half
  • molasses
  • sugar
  • vanilla extract
  • cinnamon
  • ground ginger
  • nutmeg
  • salt

Recipe Tips and Suggestions:

  • My bread of choice for overnight french toast is usually brioche bread. It’s sweeter flavor just lends itself really well to french toast. That being said, you can absolutely use other types of bread if you prefer.
  • I took each slice and cut them in half and arranged in my baking dish as pictured. This method does make it a bit more difficult to ensure the slices are fully soaked in the liquid mixture. If desired, you can also cut the bread into larger cubes so you can mix it up without worrying about ruining the arrangement!
  • I don’t go too heavy on the molasses in this recipe, if you really like that flavor, you can always add a bit more. 
  • If you take out your french toast out of the fridge and notice some dry spots in your bread, stir, or pour a little bit of milk.

Ingredients

  • 1 loaf sliced brioche bread
  • 4 tablespoons butter, divided
  • 6 large eggs
  • 1 cup milk
  • 2/3 cup half and half
  • 3 tablespoons molasses
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Take 1 tablespoon of the butter and grease a 9x9 baking dish. Set aside.
  2. Either cut slices of brioche bread into smaller slices (as pictured) or cut into bite-size cubes. Arrange in the baking dish and set aside.
  3. In a mixing bowl, add the eggs and whisk until smooth. Pour in the milk, half and half, molasses, sugar, cinnamon, ginger, nutmeg, and the salt. Continue whisking until well-combined. Pour the mixture over the bread in the baking dish, soaking each piece as best as possible (If bread is cubed, you can gently mix it up). Cover with foil and stick in the fridge for at least 4 hours or overnight.
  4. In the morning, preheat oven to 350 degrees F. Bake the french toast uncovered for approximately 35 minutes or until the french toast is cooked in the middle (slightly moist in the middle) and golden on top.
  5. Serve with syrup and dusted with powdered sugar if desired.
