Pot of Gold Cookie Cups – These cute and festive chocolate chip cookie cups are perfect for St. Patrick’s Day topped with fluffy white frosting clouds, rainbow candy, coconut grass, and M&Ms!

St. Patrick’s Day is coming up and my girls love fun and festive treats and homemade chocolate chip cookies are definitely their favorite treat to have around the house. We worked on these cookie cups together. I was going to try to pipe cute little cloud shapes, but that plan went right out the window when the girls decided to help :) 

I made my usual chocolate chip cookie recipe, but baked them a silicone muffin pan so they baked up thicker. Then we topped them with fluffy white vanilla frosting, dyed coconut grass, rainbow candy strips, and yellow M&Ms for our gold coins. These cookie cups are really simple and tasty!

To make Pot of Gold Cookie Cups, you will need:

  • butter
  • light brown sugar
  • granulated sugar
  • egg
  • all-purpose flour
  • baking soda
  • salt
  • mini chocolate chips
  • vanilla frosting
  • sweetened shredded coconut
  • green food dye
  • sour rainbow candy belts/strips
  • yellow mini M&Ms

Recipe Tips and Suggestions

  • I always prefer to chill my cookie dough before baking as it helps keep these nice and thick so plan ahead if you can!
  • To save time, you could use pre-made cookie dough mixes.
  • You can pipe or just spoon vanilla frosting onto the cookies. 
  • If you prefer, you can use cool whip instead of the whipped vanilla frosting, but the frosting has a bit more thickness to hold up the rainbow candy so is recommended.
  • I like to chill the frosting and rainbow candy before arranging these. If the frosting is too soft/warm, it will be more difficult to get the rainbow candy strips to stay up.
  • You can skip the coconut if you’d like and just make the entire base the cloud with frosting if desired.
  • If you don’t want to use M&Ms, you could also just use yellow/gold sanding sugar.

Pot of Gold Cookie Cups - These cookie cups are perfect for St. Patrick's Day topped with frosting clouds, rainbow candy, grass, and M&Ms!

Ingredients

  • 8 tablespoons unsalted butter, softened
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/3 cup all-purpose flour
  • 1 teaspoon baking soda
  • pinch salt
  • 2/3 cup mini chocolate chips
  • 3/4 cup vanilla frosting
  • 6 sour candy strips
  • 2/3 cup sweetened shredded coconut
  • green food dye
  • 1/4 cup yellow mini M&Ms

Instructions

  1. In a medium mixing bowl, cream together the softened butter, brown sugar, and granulated sugar. Beat in the egg and vanilla until well-combined.
  2. Add in the flour, baking soda, and salt. Mix with hand mixer until just combined. Fold in mini chocolate chips. Cover the bowl and chill for at least 1 hour (if not longer).
  3. Preheat oven to 350 degrees F. Spray a muffin tin with non-stick spray or use a silicone muffin pan. Distribute the cookie dough amongst each cavity. Use the back of a spoon to gently press down in the center of each cookie cup to create a small well.
  4. Bake the cookie cups for about 12 minutes or until lightly golden. Remove from pan and let cool completely.
  5. To decorate, pipe or spoon two little blobs of vanilla frosting on the sides of each cookie cup.
  6. In a small bowl, mix a drop of green dye with the coconut until its dyed. Sprinkle some coconut grass in the middle of the frosting of each cookie cup.
  7. Drop a few of the M&Ms on top. Cut each of the rainbow candy strips in half and stick into the frosting of each cup to make a rainbow shape. Serve or chill until ready to serve.
