With the Lenten season approaching, I like to think about fish recipes to have on hand for Friday dinners and these Blackened Salmon Sandwiches are both delicious and ready in under 20 minutes. I love these because they have a nice fresh, spring-like flavor, but you cook them inside so need to venture out into the cold weather.

I made a quick seasoning mix with cajun spices and topped the sandwiches with an avocado crema, crumbled queso, red onion, cilantro, and extra fresh lime juice. This blend created the perfect crisp and flavorful topping. I would happily eat these sandwiches every week!

Recipe Tips and Suggestions:

  • While I made these into sandwiches, you could also serve this salmon and the crema in tortilla shells for tacos, or skip the bun and slice over a big fresh salad!
  • To achieve that nice blackened top, make sure you have a good skillet that can brown food well or a cast iron pan.
  • I topped my sandwiches with the avocado crema, sliced red onion, some crumbled queso, and cilantro. You can swap any or all of these for your desired toppings. Greens like arugula, tomato, pickles, etc. would also be good with these sandwiches.
  • If you are feeling extra lazy, you could skip the avocado crema and just use your favorite tartar sauce.
  • You could serve these sandwiches with a variety of sides like rice pilafpotato salad, roasted veggies and potatoes, or just pop open a bag of your favorite frozen french fries.

Blackened Salmon Sandwiches - These simple blackened salmon sandwiches come together in a few minutes and are topped with avocado crema. Made with spices you probably already have in your cabinet!

Ingredients

  • approx. 1 1/4 pounds salmon
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon paprika
  • 1 1/2 teaspoons garlic powder, divided
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1 large avocado
  • 1/3 cup sour cream
  • 2 limes
  • 4 brioche hamburger buns

Instructions

  1. Cut the salmon into 4 equal squares/pieces.
  2. Heat the olive oil in a skillet over medium high heat. While it's heating, in a small bowl, add all the seasonings, but set aside 1/2 teaspoon of the garlic powder and stir together. Sprinkle the seasoning on top of each piece of salmon, gently rubbing it into each piece.
  3. Add the salmon, seasoning side down into the hot pan. Let the blacken, about 3 minutes. Flip and cook skin-side down for 2-3 minutes. Gently flip back over and remove skin and discard. Continue cooking until the salmon is cooked through, about 3 minutes or so.
  4. While the salmon is cooking, toss the avocado, sour cream, 1/2 teaspoon of the garlic powder, and juice 1 lime into a food processor. Process until smooth, adding more lime if needed and salt to taste.
  5. If desired, you can toast the buns (I do this before I cook the salmon in the hot pan). Serve each slice on buns with desired toppings and the avocado crema, and more fresh lime wedges.
