Skinny Red Velvet Cheesecake Bars –  These cheesecake bars are so simple to mix up for Valentine’s Day! Less than 120 calories per bar!

With the day of love approaching, cheesecake always comes to mind as a good dessert to serve. These skinny coconut cheesecake bars are one of the most popular recipes on the blog so I’ve had a hankering to whip up a new version of them! This red velvet version is based off of my skinny marble cheesecake bars and these did not disappoint. Even my kiddos enjoyed them. The Greek yogurt gives them a bit of tanginess, but there is just enough sugar and when swirled with the semi-sweet chocolate for the red velvet base, they have just the right amount of sweetness without going totally overboard.

To make Skinny Red Velvet Cheesecake Bars, you will need:

  • graham cracker crumbs
  • butter
  • low-fat cream cheese
  • plain low-fat/non-fat Greek yogurt
  • egg whites
  • vanilla extract
  • all-purpose flour
  • granulated sugar
  • semi-sweet chocolate chips
  • distilled vinegar
  • red gel food coloring

Recipe Tips and Suggestions:

  • I recommend making these the night before you plan to serve them as they need time to chill after they come out of the oven. At minimum, plan for a good 4-6 hours before slicing and serving. 
  • This recipe uses plain Greek yogurt, but you can use vanilla as well.
  • I wanted more of the red to come through on these so I split a bit more  (2/3 of the batter) to mix in with the chocolate and food coloring. If you want less, you can do half plain/half red velvet or even less. 
  • You might want to use gel food coloring over liquid coloring as less goes a longer way and doesn’t impact the taste.
  • To cut even more carbs from this recipe, you can swap the graham cracker crumbs with crushed almonds or almond flour, or if you have a favorite low-carb cookie that you can crush/grind up into fine crumbs.

Skinny Red Velvet Cheesecake Bars - Enjoy your cheesecake without all the calories. These cheesecake bars are so simple to mix up for a Valentine's treat!

Ingredients

  • 3/4 cup graham cracker crumbs
  • 3 tablespoons unsalted butter, melted
  • 8 ounces reduced fat cream cheese (or Neufchâtel cheese), softened
  • 3/4 cup 0% plain Greek yogurt
  • 2 large egg whites
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/3 cup semi-sweet chocolate chips
  • 1 teaspoon distilled white vinegar
  • red gel food coloring

Instructions

  1. Preheat oven to 350 degrees F. Line an 8×8 baking dish with foil with some overhang on the side.
  1. In a bowl, stir together the graham cracker crumbs and melted butter until well-combined. Press the crumbs into the lined baking dish. Bake for 8-9 minutes. Set aside to make filling.
  2. Beat the softened cream cheese in a mixing bowl for about 1 minute. Beat in the yogurt, sugar, egg whites, and the flour for about 3 minutes. Stir in the vanilla extract and set aside. 
  3. In a microwave-safe bowl, melt the chocolate chips by heating for 30 seconds, stirring, and heating in 10 second increments if needed until melted. Scoop out about 2/3 cup of the cheesecake batter. Stir together with the melted chocolate. Then stir in the vinegar and desired amount of red food coloring and stir until well-combined.
  4. Pour the plain cheesecake filling into the baking dish over the crust. Then dollop the red velvet batter over the plain batter. Use a knife to swirl the red velvet batter in with the plain batter.
  5. Bake the bars for 20 minutes. Cover the pan with foil and bake for another 5 minutes. Remove from the oven and let cool for about 25 minutes. Then store in the fridge to chill for at least 4 hours before cutting.
