I know it’s still only August, but if you are also a person that lives in an area that is hot as heck, you are probably like me – Fall cannot come fast enough! These Pumpkin Pie Overnight Oats are the perfect breakfast to transition into a new season because you get all the delicious fall flavors, but don’t have to stand over a hot stove to make them!

To make Pumpkin Pie Overnight Oats, you will need:

  • old fashioned oats
  • almond milk (or any milk of your choice)
  • pumpkin puree
  • maple syrup or light brown sugar
  • vanilla extract
  • pinch of salt
  • pumpkin pie spice (or cinnamon, nutmeg, and ginger)
  • Suggested toppings or mix-ins: whipped cream, chopped pecans or walnuts, chia seeds, pumpkin seeds, bananas or blueberries, etc.

Recipe Tips and Suggestions:

  • The recipe provided below is enough for a good size serving. If you want to meal prep for multiple days, you can easily double or triple as needed and mix in multiple containers.
  • Any type of milk will do, I used almond, but use whatever you have on hand.
  • I like to be lazy and use pumpkin pie spice, but of course, if you don’t have it, you can just add in cinnamon, nutmeg, and ginger if you have those handy to sprinkle in.
  • I do recommend using old fashioned oats over quick oats for overnight oatmeal. Quick oats get a big soggier.
  • I topped mine with a bit of whipped cream and a sprinkle of pumpkin pie seasoning, but there are lots of great toppings and mix-ins you can try: chopped pecans or walnuts, chia or hemp seeds, flax, graham cracker crumbs, bananas or blueberries, or even chocolate chips.

Ingredients

  • 3/4 cup almond milk (or milk of your choice)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice (or to taste)
  • 2 tablespoons pumpkin puree
  • 1-2 tablespoons maple syrup (or to taste)(OR 2 teaspoons light brown sugar)
  • pinch of salt
  • 1/2 cup old fashioned oats
  • Suggested toppings: whipped cream, chopped nuts, chia, flax, etc.

Instructions

  1. In a small bowl or container, whisk together the milk, vanilla extract, pumpkin pie spice, pumpkin puree, maple syrup, and salt.
  2. Stir in the oats until well-combined. Cover and refrigerate for at least 4 hours or overnight. Stir and top with desired toppings and enjoy!
