These Strawberries and Cream Cookies are the perfect summer cookie with their pretty light pink hue and sweet strawberry flavor bursting with white chocolate chips and no artificial ingredients required!

Nothing says summer more than strawberries and who doesn’t love the idea of a strawberry cookie? Especially one that is not made with any artificial ingredients! That’s right, no artificial strawberry flavoring or jello mix in these. The key ingredient for these cookies are the magic of freeze-dried strawberries and some very simple ingredients you probably already have in your pantry!

To make Strawberries and Cream Cookies, you will need:

  • freeze-dried strawberries – freeze dried strawberries are the key here. Fresh will result in a wet cookie and dried strawberries would just be really chewy. We are going to grind up those freeze-dried strawberries to make a powder/flour-like texture and then chop up more for good measure.
  • butter
  • granulated sugar
  • eggs
  • vanilla extract
  • all-purpose flour
  • baking soda
  • salt
  • white chocolate chips (optional)

Recipe Tips and Suggestions:

  • As stated above, freeze-dried strawberries are the key for this recipe. Since we are not adding jello mix or strawberry extract flavoring, these cookies are not going to have as strong of a “flavor”, but I rather like the more subtle flavor and the lack of adding artificial flavorings.
  • Related to the above, the cookies have a light pink hue, but as you can see from the photos, it is not vibrant. If you want, you can certainly add some pink food coloring.
  • Make sure you really grind up the freeze-dried strawberries. The mixture should mostly be powder and acts like flour in this recipe. It’s okay if some really small chunks remain (and I even like to chop up extra chunks to mix in at the very end.
  • As always with my cookies, I like to chill the dough for at least a few hours to get a nice thicker cookie so keep that in mind. Its not required, but I prefer it!
  • White chocolate chips are optional, of course. You could also add dark chocolate chips for a more decadent chocolate-covered strawberry cookie vibe!
  • Finally, I like to do a quick rough chop of some additional freeze-dried strawberries and fold them in at the end with the white chocolate to add little bursts of red in the cookies.

Ingredients

  • 1 1/4 cup freeze-dried strawberries
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips (optional)

Instructions

  1. Add the freeze-dried strawberries into a food processor. Blend until the strawberries are ground into a powder, flour-like texture. Set aside.
  2. Add the butter and sugar into a mixing bowl. Cream together with a mixer. Add in the eggs and vanilla and mix until combined.
  3. In a separate bowl, add the flour, strawberry powder, baking soda, and salt and mix until combined.
  4. Add the dry ingredients in with the wet ingredients and mix until just combined. If using, fold in the white chocolate chips and some additional chopped freeze-dried strawberries if desired.
  5. Cover the bowl and chill for at least 3 hours.
  6. Preheat oven to 350 degrees F. Line a large baking sheet with parchment or a baking mat. Drop about 2 tablespoons of the cookie dough onto the baking sheet and repeat, leaving about 2 inches in between each one. Bake cookies for 10-12 minutes or until the cookies are just turning golden.
