Summer isn’t typically considered soup season, but sometimes on a rainy summer evening, I still crave something cozy. This Instant Pot Chicken Corn Chowder is perfect because you don’t need to stand over a hot stove to make it, just toss everything in the pressure cooker and you are done! Since it is summer, I used fresh corn for this recipe, but you can always use frozen corn as well. This chowder is so simple, delicious, and comforting!

To make Instant Pot Chicken Corn Chowder, you will need:

  • Olive oil
  • Yellow onion
  • Boneless skinless chicken breasts
  • Gold potatoes (russet also works)
  • Corn (Can be fresh or frozen)
  • Salt
  • Cumin
  • Paprika
  • Chicken broth
  • All-purpose flour
  • Half and half (or milk)
  • Shredded cheese
  • Sliced green onion, cilantro, etc. (for garnish)

Recipe Tips and Suggestions:

  • This recipe calls for gold potatoes. I prefer gold potatoes because they just have a smoother and creamier texture in this chowder, but russet potatoes also work just fine if that’s what you have on hand!
  • If it’s summer, I highly recommend using fresh corn shaved off the cob! I toss it in at the end so it’s a bit al dente when you eat it. I love the texture fresh corn adds, but of course, you can absolutely use frozen corn.
  • This chowder is pretty simple, you can add additional mix-ins if desired like celery or peas.
  • For garnish, I like to add some shredded cheese and sliced green onion. You can also add cilantro, crumbled bacon, and/or a dollop of sour cream on top!

Ingredients

  • 2 tablespoons olive oil
  • 1/2 yellow onion, finely diced
  • 1 1/2 pound boneless skinless chicken breast, cut into bite-size pieces
  • 4 cups diced and peeled gold potatoes
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 4 cups chicken broth
  • 4 tablespoons all-purpose flour
  • 1 cup half and half
  • 2 cups corn (fresh cut off the cob or frozen)

Instructions

  1. Set pressure cooker to saute function. Add the olive oil and heat. Then add the onion and cook in the oil for about 4 minutes, stirring.
  2. Add the chicken, potatoes, salt, cumin, and paprika. Stir to combine. Turn off saute function. Pour in the broth and secure pressure cooker lid.
  3. Set valve to seal pressure. Set pressure cooker to cook on manual for 10 minutes.
  4. Once timer goes off, manually release pressure. Switch pressure cooker back to the saute function. Pour the half and half into a bowl or measuring cup. Spoon in the flour and stir vigorously to combine. Pour into the chowder.
  5. Let the soup simmer. Stir in the corn and continue simmering until the chowder begins to thicken. If desired, add more salt and spices to taste. Once thickened, set pressure cooker to warm or turn off for serving.
  6. Serve chowder with shredded cheese, sliced green onions, cilantro, crumbled bacon, and/or sour cream.
