Instant Pot Chicken Corn Chowder
This Instant Pot Chicken Corn Chowder is the perfect quick and easy comfort meal to enjoy all year around and is ready in minutes in the pressure cooker! This soup is made with tender chicken breasts, potatoes, and fresh corn.
Summer isn’t typically considered soup season, but sometimes on a rainy summer evening, I still crave something cozy. This Instant Pot Chicken Corn Chowder is perfect because you don’t need to stand over a hot stove to make it, just toss everything in the pressure cooker and you are done! Since it is summer, I used fresh corn for this recipe, but you can always use frozen corn as well. This chowder is so simple, delicious, and comforting!
To make Instant Pot Chicken Corn Chowder, you will need:
- Olive oil
- Yellow onion
- Boneless skinless chicken breasts
- Gold potatoes (russet also works)
- Corn (Can be fresh or frozen)
- Salt
- Cumin
- Paprika
- Chicken broth
- All-purpose flour
- Half and half (or milk)
- Shredded cheese
- Sliced green onion, cilantro, etc. (for garnish)
Recipe Tips and Suggestions:
- This recipe calls for gold potatoes. I prefer gold potatoes because they just have a smoother and creamier texture in this chowder, but russet potatoes also work just fine if that’s what you have on hand!
- If it’s summer, I highly recommend using fresh corn shaved off the cob! I toss it in at the end so it’s a bit al dente when you eat it. I love the texture fresh corn adds, but of course, you can absolutely use frozen corn.
- This chowder is pretty simple, you can add additional mix-ins if desired like celery or peas.
- For garnish, I like to add some shredded cheese and sliced green onion. You can also add cilantro, crumbled bacon, and/or a dollop of sour cream on top!
