These overnight oats are scrumptious and decadent without being overloaded with sugar or other weird ingredients and best of all, offer a nutritious start to your day! These oats are super simple to mix up and prep the night before.
The layer of melted chocolate on top really makes this seem like a dessert, so if you prefer a “sweeter” breakfast, these overnight oats are the perfect alternative!
To make Chocolate Peanut Butter Cup Overnight Oats, you will need:
- old fashioned oats
- unsweetened almond milk
- unsweetened cocoa powder
- pinch of salt
- natural peanut butter
- vanilla extract
- maple syrup
- semi-sweet chocolate chips
- peanuts (for garnish)
Recipe Tips and Suggestions:
- Be sure to use old fashioned oats instead of quick oats. Quick oats will result in a mushier texture.
- I use unsweetened vanilla almond milk, but any milk that you have on hand will work for this recipe.
- If peanut butter is not your thing, you can swap it out for almond or other nut butters.
- Maple syrup works well to sweeten these oats, but if you don’t have any, you can also stir in 1-2 teaspoons of stevia or other sweentener alternatives, or, of just regular old light brown sugar.
- If you are feeling too lazy to make the chocolate top layer, you can skip this step and just stir in a tablespoon of chocolate chips to get the chocolate fix.
- Feel free to stir in other add-ins if desired like chia seeds or protein powder.
- This recipe is for one serving, but can easily be doubled or tripled for meal prepping.
