Ok, so I think I might be the worst blogger on the planet right now! I’ve been so neglectful! Wahhh, I’m sorry my loves!! As you know, things have been quite crazy in my world lately. This week I am in Phoenix! I had orientation at ASU for my job yesterday and today I will be finding a place to live! I love house hunting because I can pretend that I am on an episode of House Hunters. I’m that annoying lady who complains too much and nitpicks at every little thing, like, “this kitchen is too small. This closet is too small. What is that on the ceiling there? That paint color is horrendous.” But, as much as I love house hunting, I only have two days to find a place to live! Yes, 1. 2. Two. We are just looking to rent something for now, but I still want it to be nice and Hubs is not here to help me out! Oh, the pressure!!!
Despite the madness, I still have a yummy recipe to share with you all! Living in Florida and soon, Arizona, means that lemonade is a requirement for survival. After making sparkling strawberry lemonade, I really wanted to try another variation. Raspberries and peaches are a great combo! It’s not overly sweet which is important for me as I don’t like really sweet drinks. Oh, and of course, it’s refreshing! Cold and fruity lemonade…does it get any better?!
P.S. It’s currently pouring here. What the heck? Florida must have followed me here.

Good morning, friends! It’s Friday!! Yeah!! Hubs and I are in Orlando this weekend visiting family. It’s nice to get away for a weekend after the long two weeks I’ve had!
Today I am guest posting on Kym’s lovely blog, Free Spirit Eater. Kym was one of the first people I met when I first starting blogging and she is so incredibly sweet and supportive! I’m so happy to be on her blog today!
I made some tasty little quinoa corn cakes topped with fresh peach, avocado, and tomato salsa! These cakes are light on the tummy, but so tasty. I think I could just eat the salsa with a spoon!

Do you ever have one of those days where you are a complete disaster and have no right to be in the kitchen? Like, have you ever spilled almost an entire bottle of vinegar all over the place? Twice? Yeah, that was me yesterday, while making this pizza.
It probably had something to do with the complete and total exhaustion I have been feeling since last week. The week and weekend went by so fast, I don’t think it has really sunk in yet that I finished! This weekend was graduation so my family came into town for the ceremony which was bright and early Saturday morning. It was a great time, but it was a crazy busy weekend. So busy that I woke up yesterday and my legs felt so sore, I could barely walk! Going to the grocery store was difficult!
And now that I have my dissertation out of the way, I can make my next exciting announcement which is that I have accepted a post-doc position at Arizona State University in Phoenix! My current advisor got a great offer to go there and she asked me to go with her! Me and Hubs will be moving out west at the end of September! But, now this means packing…the bane of my existence…sigh…
Now that I have had a little more free time, I have finally been able to share a recipe for #tomatolove hosted by Cassie from Bake Your Day and Ali from Gimme Some Oven!! I chose to do a simple caprese pizza…or is it a margherita pizza? They seem like the same thing…Whatevs. I used red and yellow tomatoes, but you can use whichever tomatoes you want! And I also drizzled some balsamic reduction all over the pizza. It adds such a great flavor!
I passed my dissertation defense!!! I am Dr. Stephanie!!!!
WOOOOOOOOOO!!! It’s been such a stressful last couple of months. Defending a dissertation is no joke and is both mentally and physically draining. I don’t with it upon my greatest enemy. Ok, I don’t really have a greatest enemy, but if I did, My brain is fried and I am sleep deprived (hey, that rhymed!) and I am dreaming of a long and lazy vacation that really just involves sleep and tv. That’s really all that I want right now. I also really want to eat a bunch of cookies that a full of chocolate.
So let’s celebrate with some fattening and delicious cookies! I took my usual chocolate chip cookie recipe and made some adjustments to make these nice and chocolatey cookies. My favorite thing about these cookies is Nutella. Nutella makes everything in this world better, don’t you think?
It was my turn this week to pick out the recipe and I decided to go for a dessert since we haven’t done a Skinny Bitch dessert yet! So, I chose the peach crisp. I love fruit crisps because they are easy to make and the possibilities are endless! Clearly, my crisp is not a peach crisp. I went for a strawberry crisp! Strawberries have been looking so gorgeous lately and I can’t get enough of them. And what would make a strawberry crisp even better? That’s right. Chocolate. I’ve never put chocolate in a crisp, but I am going to do it again because this crisp was freaking awesome! Chocolate and strawberries are a perfect combination!
Okay, who else is obsessed with watching gymnastics?! I wish they were on every night. Definitely my favorite part of the Olympics. So entertaining to watch and how freaking adorable are the Fab Five?! I just want to give them all a big hug. Watching it also makes me want to pretend that I am also a gymnast and can do flips and twists on a 4-inch beam when in reality, I can barely walk on regular flat ground without falling down…
For me, summertime is about eating light. The last thing I usually want this time of year is a big bowl of pasta with heavy sauce. I like my summer pasta dishes to be light and full of veggies!
Oh, and let’s not forget, it also has to be covered in fresh lemon juice. Lots and lots of lemon juice.
I only had some zucchini and tomatoes on hand, but I think squash, broccoli, spinach, and mushrooms would be good too! The more the merrier, right?!
