No-Bake Peanut Butter Granola Bars

Ordering groceries online has been quite an adventure. So many things are hard to get and I feel like I’m always trying to add things to my cart so frantically before they disappear. Case in point, I needed oats and added them so quickly. Delivery came and I found that I ordered a bulk size of oats, oops! It’s a good thing I love oatmeal!

Making your own granola bars is also a great way to use them up so I made these simple no-bake peanut butter granola bars! And the best part about these is that you only need a small handful of other ingredients to make them!

No-Bake Peanut Butter Granola Bars

Some peanut butter, oats, honey, and vanilla are all that’s required. Melt the peanut butter in the microwave, stir in the honey, vanilla, and oats and just let it chill out in the freezer for a bit, slice, and enjoy!

Of course, you can add in other ingredients like chopped peanuts, chocolate chips, chia seeds, almonds, etc. I used natural peanut butter for this, but you could use any peanut butter you have, it may just make them a bit sweeter (which of course, your kiddos may prefer anyway!)!

I do recommend keeping these stored in a container in the fridge for maximum freshness. Since the bars are no-bake, they keep their shape better chilled.

No-Bake Peanut Butter Granola Bars - No-baking required and are made with just 4 simple ingredients: oats, peanut butter, vanilla, and honey!

Ingredients

  • 3 cups rolled oats
  • 1 cup natural creamy peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla extract

Instructions

  1. Add the peanut butter to a microwave-safe bowl. Heat for 30 seconds. If the peanut butter is melted, remove, if not, heat for another 15 seconds. Add the oats, honey, and vanilla to the bowl. Mix until well-combined.
  2. Line an 8x8 baking dish with foil. Add the mixture to the baking dish and spread into an even layer with a spatula or clean hands. Stick the dish in the freezer for 25 minutes. Slice into 8 bars. Store the bars in an airtight container in the fridge.
