Happy Thursday! We are having a great time in Florida spending time with family which explains my odd posting schedule. This weekend we will be celebrating my grandparent’s 60th anniversary. It’s such a special celebration and we are so glad to be a part of the fun and have lots of little surprises planned for them. My grandparents are two of my most favorite people in the world and are such an inspiration for my own marriage.

I’m keeping the road trip snacks coming today with a savory snack: popcorn! I love popcorn for road trips, especially homemade versions because I can control what goes in it and compared to greasy potato chips, popcorn is a healthier snack to reach for. Although I love Parmesan popcorn for a road snack, it’s also obviously totally perfect for a movie night at home!

This Parmesan version is super simple and doesn’t require many ingredients besides popcorn, butter, and Parmesan cheese! Now, I’m not going to lie to you guys. I made a batch of this the day before we left and planned to pack it in bags for the car, but it’s also very possible that we ended up just eating it straight from the pan! Oops!

Parmesan Popcorn

Parmesan Popcorn

Parmesan Popcorn - make your own homemade popcorn packed with Parmesan flavor! Perfect for a night in or to take on the road for a snack!

Ingredients

  • Approx. 3 quarts popped popcorn
  • 1/3 cup unsalted butter
  • 1/3 cup grated Parmesan cheese (plus more for sprinkling extra if desired)
  • salt to taste (optional)

Instructions

  1. Spread the popped popcorn on a large cookie sheet or in a large bowl. Melt the butter in the microwave. Stir in the Parmesan cheese. Pour the butter mixture over the top of the popcorn. With clean hands, toss the butter mixture with the popcorn until it is well-coated. Sprinkle additional Parmesan and/or salt if desired. Store leftovers in an airtight container for up to 4 days (popcorn is best eaten within the first two days).
