Roasted butternut squash is layered on top of fresh mozzarella cheese, caramelized onions, fresh sage, and then topped with arugula. This dish is great for weeknight dinners or to serve as an appetizer for fall gatherings!

I love a good flatbread pizza. I’m not a fan of really thick crust so flatbreads are the best shortcut for mixing up quick pizzas. This flatbread starts with caramelizing onions and roasting some butternut squash. Then just layer them on your favorite flatbread with fresh mozzarella and sage leaves and bake. While it’s baking, mix up some arugula with some olive oil and balsamic and pile it on top of the slices and you’ve got yourself a seriously flavorful bite!

  • butternut squash
  • olive oil

  • If you want to prep any of this recipe ahead of time, you can break down the butternut squash, cube, and roast it. You can also caramelize the onions and shred the cheese and store everything in the fridge until ready to assemble.
  • To save time, you can likely find pre-cubed butternut squash in the produce section of your grocery store if you don’t want to have to deal with breaking a whole one down.
  • If you prefer, you can swap out the mozzarella for more flavorful cheeses like fontina or gruyere cheese.

Ingredients

  • 1 large butternut squash; peeled, seeded, and cubed into small pieces
  • 4 tablespoons extra virgin olive oil, divided
  • salt & pepper
  • 2 tablespoons butter
  • 1 large yellow onion, thinly sliced
  • 1 package flatbread (2 flatbreads)
  • 2 cups freshly shredded mozzarella
  • 1/4 cup fresh sage leaves
  • 3 cups baby arugula
  • 1/3 cup balsamic vinegar

Instructions

  1. Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper. Arrange the cubed butternut squash on the baking sheet. Drizzle 2 tablespoons of the olive oil and sprinkle with salt and pepper and toss with a spatula so the squash is coated. Bake the squash for about 25-35 minutes or until the squash is tender. Once done, remove from the oven and set aside.
  2. While the squash is roasting, prepare the onions. Heat a saute pan over medium heat. Melt 2 tablespoons of butter and then add the onions. Sprinkle with a bit of salt. Allow the onions to cook down and caramelize, stirring every couple of minutes, about 10-15 minutes. Remove from the heat and set aside.
  3. Lower heat on the oven to 375 degrees. Place both of the flatbreads onto a lage baking sheet. Divide the cheese on top of each one, followed by the caramelized onions, sage leaves, and butternut squash. Sprinkle the top with another sprinkle of salt.
  4. Bake the flatbreads about 10 minutes or until heated and the cheese is fully melted. Cut into desired number and shape slices.
  5. Place the arugula in a bowl and toss with the remaining 2 tablespoons of olive oil, balsamic vinegar, salt and pepper to taste. Serve alongside or spoon some on top of each slice and serve.
