Savory Breakfast Croissant Casserole – This delicious savory french toast is perfect for holiday breakfast! Buttery croissants chopped and baked with a eggy custard, cheddar and gruyere cheese, and crumbled bacon.

When it comes to breakfast, I am almost always team savory. While I do enjoy oats, pancakes, or french toast, I just tend to prefer not starting my days with a lot of sugar. This breakfast casserole is basically a savory french toast. You will start with some chopped up croissants. Then you will whisk up some eggs, heavy cream, and spices. For the cheese, I like to use a blend of white cheddar and gruyere cheeses. Then of course, you will add the bacon. Bacon makes everything better and should absolutely not skip the bacon here. Shove it in the oven while the family opens gifts, and you will have the yummiest breakfast to fuel your busy holiday!
To make this Savory Breakfast Croissant Casserole, you will need:
- prepared croissants
- butter
- eggs
- heavy cream (or half and half)
- salt & pepper
- garlic powder
- onion powder
- paprika
- white cheddar cheese
- gruyere cheese
- chives
Recipe Tips and Suggestions:
- You can prep this the night before you need to serve it and just pop into the oven in the morning.
- I used a block of cheese that is a blend of both white cheddar and gruyere cheese. You may able to find something similar, or you can get a block of each one separately. Of course, you can also experiment with other blends of your favorite cheeses.
- I like adding bacon as it’s my favorite breakfast meat, but you could also do crumbled breakfast sausage or even ham if you want to swap the bacon or add more meat.
- To ensure the casserole is done, make sure you test the middle of the casserole, like french toast, you want it to be slightly moist, but not really wet, otherwise, stick it back in to keep baking.
- If the middle needs more time to bake, you can place foil back on top to prevent the top for over-browning.

Ingredients
- 3 tablespoons unsalted butter, cubed
- 7 large croissants, cut into 2-inch pieces
- 7 large eggs
- 1 cup heavy cream (or half and half)
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon mustard powder
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 cup white cheddar cheese, freshly grated
- 3/4 cup gruyere cheese, freshly grated
- 8 slices bacon, cooked and crumbled
- chives
Instructions
- Preheat oven to 350 degrees F. Grease a 9x13 baking dish with some of the butter or spray with cooking spray and set aside.
- In a bowl, whisk together the cream, eggs, and seasonings. Set aside.
- Add about half the croissants to the baking dish. Sprinkle about 1/3 of the cheese and 3 slices of crumbled bacon.
- Add the remaining croissants on top. Pour the cream and egg mixture on top to soak all of the croissants. Sprinkle on the remaining cheeses and bacon. Cube up the remaining butter and divide on top. Cover with foil.
- Bake the casserole for about 30 minutes. Remove the foil and continue cooking the casserole for about 15-20 minutes or until the top is golden and the middle is cooked through. Garnish with chopped chives and serve warm.
