Summer is here and it’s officially s’mores season! It’s already hot as heck here in Florida so I am down for any recipe that doesn’t require me to turn on the oven and you know I love a good no-bake cheesecake (as evidenced by like 15+ versions I’ve made)! I’m actually kind of surprised it’s taken this long for me to make a s’mores version. This no-bake cheesecake is so decadent and kind of fancy, but is simple enough to make for your summer gatherings!

First you will start with a graham cracker layer for the crust. The cheesecake layer is made with cream cheese, whipped topping, marshmallow fluff, and melted chocolate. After that, we top the cheesecake layer with more chocolate bc you can NEVER have enough chocolate. Top it all off with some more whipped cream, a toasted marshmallow, and a chocolate square.

To make these No-Bake S’mores Cheesecakes, you will need:

  • butter
  • graham cracker crumbs
  • cream cheese
  • semi-sweet chocolate
  • whipped topping (like Cool Whip)
  • marshmallow fluff
  • vanilla extract
  • marshmallows
  • milk chocolate bar (for garnish)

Recipe Tips and Suggestions:

  • I recommend using whipped topping (like Cool Whip) over regular whipped cream for this recipe as it has added ingredients that help stabilize the cheesecake. However, if you do not have it or prefer not to use it, you can make your own whipped cream with heavy whipping cream.
  • Although you don’t have to bake these, they will require time to set in the fridge so I recommend making them either the night before or early in the morning the day you plan to serve them as they need at least 4-6 hours to set.
  • You can leave the chocolate out of the cheesecake layer if you prefer to keep it just marshmallow-flavored.
  • Similarly, I did not fold in any marshmallow fluff to the whipped topping on top, but you could also try mixing a bit in, just keep in mind that too much mixing can cause the whipped topping to go flat.
  • I used regular-sized marshmallows on top for garnish, but you can also use mini marshmallows.
  • I made these in little dessert glasses. If you do not have these, you can also use clear plastic cups which are more party-friendly.
  • Finally, you do not have to make these into individual servings, you can make them in one cheesecake pie. Either just purchase a graham cracker crust or mix the crust into one pie dish. If you make it this way, I would allow a good 6-8 hours to set before serving.

No-Bake S'mores Cheesecakes - Graham cracker crust layered with simple chocolate marshmallow cheesecake, chocolate, whipped cream, and a toasted marshmallow on top - no baking required!

Ingredients

  • 6 tablespoons butter, melted
  • 1 cup graham cracker crumbs
  • 8 ounces plain cream cheese, softened
  • 1/2 cup marshmallow creme (fluff)
  • 1 teaspoon vanilla extract
  • 8 ounces whipped topping
  • 1 cup semi-sweet chocolate chips, divided
  • marshmallows
  • milk chocolate bar

Instructions

  1. Add the melted butter to a mixing bowl followed by the graham cracker crumbs. Mix until the crumbs are well-coated by the butter.
  2. Add about 1 1/2-2 tablespoons of crumbs to the bottoms of each serving dish/cup and press down to make a crust. Place the cups in the freezer.
  3. In a medium mixing bowl, add the cream cheese and marshmallow fluff. Beat with a hand mixer until well-combined and smooth.
  4. Melt 1/2 cup of the semi-sweet chocolate in a glass bowl in 15-30 second increments in the microwave, stirring in between until chocolate is melted. Add the melted chocolate to the cream cheese along with vanilla extract. Continue mixing until well-combined. Fold in 1/2 of the tub of whipped topping until just combined.
  5. Remove the serving bowls/cups from the freezer. Divide the cheesecake mixture in each bowl/cup. Gently smooth down with a back of a spoon.
  6. Melt the remaining chocolate in the microwave. Pour about 1 tablespoon of melted chocolate on top of the cheesecake layer in each bowl/cup and smooth.
  7. Divide remaining whipped topping on top of each cheesecake. Place the bowls into a covered container in the fridge. Chill for at least 4 hours, if not overnight, before serving.
  8. For garnishing, gently press down on one large marshmallow per cheesecake, use a kitchen torch or lighter to toast the tops of each marshmallow. Add them on top of each cheesecake. Finish each cheesecake off with a small square of milk chocolate. Serve. Store leftovers in the fridge.
