Gnocchi Lasagna Bake – Tender & pillowy gnocchi baked to perfection with ground beef, gooey cheese, and tomato sauce for the perfect weeknight comfort meal!

It’s August and although we are at peak summer temps in Florida, I’m going to pretend that’s not my reality and it’s time to start working in some comfort meals. School is starting which means it’s time to resume weekday craziness. This Gnocchi Lasagna Bake is the perfect easy weeknight meal – you can enjoy all the lasagna goodness, but without the layering! To make this dish, you will need to brown up the ground beef and gnocchi in a skillet. Then, it all goes into a baking dish topped with sauce and cheese and bakes until ready to inhale so this dish is pretty hands-off!

To make this Gnocchi Lasagna Bake, you will need:

  • olive oil
  • salt & pepper
  • Italian seasoning
  • ground beef
  • gnocchi
  • marinara sauce (homemade or store bought)
  • ricotta cheese
  • mozzarella cheese
  • Parmesan cheese

Recipe Tips and Suggestions:

  • You can prepare this recipe in advance by cooking the meat so it’s ready to assemble for baking.
  • If you do not want to add ground beef,  you can swap it for ground turkey, sausage, chicken, or leave out entirely. You can also skip the meat all together.
  • Veggies would be a great addition to this – spinach, zucchini, or mushrooms, just to name a few!
  • As you can see from the recipe, I do not boil the gnocchi. Instead it cooks a bit as it browns in the skillet and then finishes baking in the oven. 
  • Not a fan of gnocchi? You can make this with pasta!

Gnocchi Lasagna Bake

Gnocchi Lasagna Bake - Tender & pillowy gnocchi baked to perfection with ground beef, gooey cheese, and tomato sauce for the perfect weeknight comfort meal!

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 pound lean ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 16 ounces potato gnocchi
  • 4 cups marinara sauce
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup ricotta cheese
  • 1 1/2 cups fresh grated mozzarella cheese

Instructions

  1. Preheat oven to 350 degrees F. Add the olive oil to a skillet over medium high heat. Add the ground beef to the pan and break up with a spatula as it cooks. Season the beef with the salt, pepper, and the Italian seasoning. Continue cooking the beef for about 7 minutes.
  2. Add the gnocchi to pan and stir in with the beef. Let cook for about 5 minutes. Stir in 3 cups of the tomato sauce and remove from the heat. If needed, add additional sauce.
  3. Add about half the mixture to a baking dish. Sprinkle about half of the mozzarella cheese over the gnocchi. Add the remaining gnocchi mixture. Sprinkle the Parmesan cheese and remaining mozzarella on top followed by dollops of the ricotta cheese.
  4. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for another 5-10 minutes or until the cheese is completely melted and sauce is bubbling. Serve.
