I hope you all had a wonderful Christmas! You didn’t think I would leave you hanging without a great New Year’s Eve cocktail, did you? Of course not. You should know me better by now.
I love champagne and you can’t ring in the new year without champagne. It just isn’t right. I know some people really like to have big New Year’s Eve parties or like to go out, but as I’ve told you before, I’m an old lady so I will be spending the night at home with my hubs drinking this bellini!
Bellinis are one of my most favorite cocktails, especially peach bellinis! These bellinis are frozen so if you’re in colder parts of the country, you might think it’s weird to have a frozen drink this time of year, but I’m always down for a frozen treat!
These peach bellinis are perfect to make if you are having a party because you can make a big batch of the peach blend and then just pour in glasses and top with champagne as you need to.

Yield: 2 bellinis
Prep Time: 10 minutes
- 1 cup frozen peaches
- 1/4 cup peach schnapps
- 1 1/2 tablespoons sugar
- 1 cup ice cubes
- 1 cup champagne or prosecco
- Add the peaches, schnapps, sugar, and the ice cubes in a blender. Blend until smooth. Divide the mixture among two champagne flutes. Top off each glass with champagne. Stir gently to combine if desired. Serve immediately.
If you want to prep a bigger batch, you can make more of the peach mixture in the blender, but if you let it sit, I recommend stirring it or mixing it up again in the blender.
