First there was plain no-bake energy bites, now we have chocolate energy bites!
I love how easy it is to make no-bake little treats like these, especially when these treats have some healthy ingredients like oats, flax, and chia seeds! To make these chocolate bites, I pretty much used the same recipe as my regular bites and made just a few changes.
By using your favorite chocolate spread in place of peanut butter and throwing in a few extra chocolate chips (can you ever have too many chocolate chips?!), these bites are more decadent, a dessert energy bite, if you will! These are sure to satisfy your chocolate cravings and will also give you a good dose of fiber, antioxidants, and omega-3 fatty acids.
- 1 cup quick oats (use gluten-free oats if you want to for these to be gluten-free)
- 1/2 cup chocolate spread (I used cocoa almond butter from Trader Joe's, but Nutella or similar spreads should work just fine)
- 1/4 cup honey (you can also use agave nectar or maple syrup)
- 1 tbs. melted coconut oil
- 1 tbs. chia seeds
- 2 tbs. flax seed meal
- 4 tbs. mini chocolate chips
- pinch of salt
- In a large bowl, mix together all of the ingredients until well-combined. Using your hands, roll the mixture into balls. Mine were about 1-1 1/2-inch in diameter (see note).
- Place the bites into an airtight container and store in the refrigerator for about 1 week.
Depending on the specific chocolate spread you use, some may be more oily or sticky than others which can make the bites difficult to shape. If the mixture seems to dry, try adding more honey or a little bit more coconut oil, make sure to only add a little at a time. If it seems to wet, then you can try refrigerating the mixture for 30 minutes or so.
