It’s cookie time! We are staying home this year which is always nice as holiday travel is always such a pain, but it also gives me so much more time to bake up cookies to share. While I certainly have my usual favorite holiday cookie list, I do enjoy mixing up some new cookies and these Chocolate Peppermint Sandwich Cookies did NOT disappoint – and that’s saying a lot because I will admit I am not a huge peppermint fan. 

First, the chocolate cookies are so rich and made with a combo of both dark cocoa and regular cocoa powder. They are also really soft and chewy. After you get the cookies baking, you will mix up a very simple fluffy peppermint buttercream frosting. Best of all, these cookies do not require any complicated decorating, just roll them in some crushed peppermint candy and that’s all you need to do!

To make Chocolate Peppermint Sandwich Cookies, you will need:

  • butter
  • light brown sugar
  • granulated sugar
  • egg
  • vanilla extract
  • dark cocoa powder
  • unsweetened cocoa powder
  • all-purpose flour
  • salt
  • baking soda
  • confectioner’s sugar
  • half and half
  • peppermint extract
  • peppermint candies (or candy canes)

Recipe Tips and Suggestions:

  • If you want to make these ahead of time, I recommend making the cookie portion in advance. You can also make buttercream and freeze in advance. I would maybe recommend freezing separately. I would also avoid rolling the cookies into the crushed candy until you are ready to serve/package them.
  • You can adjust the strength of the peppermint extract to meet your tastes. I actually did a little less than what is in the recipe as I am not a big peppermint fan. 
  • If you do not like peppermint at all, you can swap the peppermint extract with vanilla and instead skip rolling the cookies in candy or roll in mini chocolate chips or sprinkles!
  • Make sure the cookies are cooled completely before assembling as you do not want to melt the buttercream.
  • Note that since these are a sandwich cookie, I highly recommend making each cookie a bit smaller. You ultimately want these to be about the size of an Oreo cookie.  I used a small cookie scoop (about .33 ounces) and still felt the cookies were too large so then tried scooping dough with the scoop and then dividing that in half for each cookie, which ended up being the perfect size!

Ingredients

For the Cookies:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dark cocoa powder
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda

For the Peppermint Buttercream Filling:

  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon peppermint extract (or to taste)
  • half and half (to thin)
  • crushed peppermint candy (or candy canes)

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with a silicon baking mat or parchment paper and set aside.
  2. In a large mixing bowl, cream together the softened butter and sugars. Beat In the egg and vanilla extract until well-combined. Add the cocoa powders, flour, salt, and baking soda. Mix until just-combined.
  3. Use a small cookie scoop to scoop some dough . Take half of what you scooped and roll Into a small ball In your hands. Place onto the cookie sheet and press down slightly to create more of a disc. Repeat this process with the remaining batter.
  4. Bake cookies for approximately 6-8 minutes. Remove from the oven and let cool for a few minutes before transferring to a cooling rack. Allow cookies to cool completely before assembling.
  5. Prepare the peppermint buttercream. In a clean bowl, beat together the softened butter and powdered sugar until well-combined. Add the peppermint extract. To thin, add 1-2 tablespoons of half and half. You want the buttercream to be thick, but not so thick that you cannot spread It between the cookies. If desired, add more peppermint for stronger flavor.
  6. Add the crushed peppermint candy Into a small bowl. Spoon about 1 tablespoon of buttercream (or slightly less) onto the center of the backside of a cookie. You can spread It slightly with a knife. Then take another cookie to create your sandwich and press gently to spread the buttercream. Use a knife to smooth around the edges of the buttercream. Roll the cookie Into the crushed peppermint. Enjoy!
