Chocolate Monster Eye Cookies with Halloween sprinkes and candy eyes

It’s the best month of the whole year! If I had it my way, I would stay stuck in October forever. Halloween baking is always so much fun to do with my girls. These Chocolate Monster Eye Cookies are really simple to make. I just made a chocolatey version of my regular chocolate chip cookies. Decorate them with fun Halloween sprinkles and candy eyes and you’ve got a super simple, but festive Halloween treat!

As always with my cookie recipes, I always chill my dough for at least a couple of hours before baking. It’s not required, but the result is a thicker cookie so it’s worth the extra bit of planning.

I actually wanted to use dark chocolate cocoa powder for a darker color, but I actually couldn’t find it at a couple of stores. So you can use either dark chocolate cocoa powder or regular cocoa powder.

Recipe Tips and Suggestions:

  • As I said above, I always recommend making time to chill your cookie dough to get nice and thick cookies. Chilled dough = less spreading while baking!
  • These chocolatey cookies are great with or without the sprinkles and candy eyes. We make this recipe year round!
  • You can use dark chocolate or regular cocoa powder in this recipe. Same with the chocolate chips, the recipe calls for semi-sweet baking chips, but feel free to use whichever you like or mix them up!
  • Be sure you add the candy eyes AFTER the cookies bake. Adding them before baking results in them melting. After they are baked, I add the eyeballs after the cookies after letting them cool for a minute or two. Push down slightly to help them stick.
  • Use a variety pack of eyeball sizes if you can find one!

Chocolate Monster Eye Cookies - Simple, rich chocolatey chocolate chip cookies with fun Halloween sprinkles and candy eyeballs!

Ingredients

  • 1 cup unsalted butter, softened (2 sticks)
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • Halloween sprinkles and candy eyes

Instructions

  1. In a large mixing bowl, cream together the butter and sugars. Beat in the eggs and vanilla extract.
  2. Add in the flour, cocoa powder, baking soda, and salt to the wet ingredients. Mix with a handmixer until just combined. Fold in the chocolate chips. Cover and chill dough for at least two hours in the fridge.
  3. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat. Use a medium cookie scoop (or take about 2 tablespoons) to scoop dough and arrange on a baking sheet, about 2 inches apart. Sprinkle with desired sprinkles. Bake for about 11-12 minutes.
  4. Let cookies cool for about 1-2 minutes. Add candy eyes, pressing down slightly. Let cookies cool completely. Store in an airtight container.
