Baked Apple Cider Doughnuts
Is there anything better during the fall than a warm apple cider doughnut (or do you prefer, donut)? They just make me dream of being in cooler weather and the changing leaves. It’s a feeling I don’t get to feel very often these days since I moved out of Ohio many, many years ago, but I still remember that dreamy fall feeling well! I specifically remember annual trips to the apple butter festival and cider doughnuts were a must!
I originally posted these Baked Apple Cider Donuts back in 2012. Ever since, they’ve remained a top fall recipe on the blog. While the majority of the comments and feedback has been positive, it seemed like there could be a little tweaking to be done with the recipe. So, a couple of weekends ago, I decided to make these again and to reshoot them!
The revised recipe includes less flour and more apple cider, and I kicked up the spices a bit. I brought these into work the next day for brunch and they were devoured! These doughnuts have just the right amount of moisture and still remain cakey. I love the cinnamon and sugar topping too!
I thought these were delicious out of the oven, but actually felt they tasted even better the next morning so feel free to bake them the night before! They also freeze well if you want to make extras to pull out during the fall and holiday season! Nothing says fall like apple cider doughnuts! These baked doughnuts are perfectly warm and cozy for weekend mornings.

I’m not a donut person, but I love apple cider donuts! There is something about Fall that makes me want apple cider donuts, hot apple cider or hot chocolate!! Yummy!!

I’m drooling over these! I have a weakness for donuts, and I want that sugary goodness in my mouth. I went to Pier 1 the other day and it was so hard to keep myself from buying every single penguin decoration in the store.

How long should I bake these for if I’m using a mini doughnut pan?
Hi Jenna, I would think the time would be similar, maybe a minute or two longer.
That’s one amazing carving job right there! No idea who they’re supposed to be. But that’s just because I’m out of the loop with these things…
And these doughnuts look awesome! I wish we had apple cider over here in Germany. I guess apple juice would be almost as good. :)
I am so impressed by your pumpkin. I do the triangle eyes type pumpkin carving. Seriously impressed. November 1 means Thanksgiving meal planning. I think November is my second favorite month of the year!

These doughnuts have been on my list of things to make forever. I even bought a pan too when we got here, just haven’t gotten around to it. We are always stuck with Halloween candy too. And even more this year because the kids trick-or-treated. Hope you have a great week!

Just ate the first doughnut. They are light and fluffy, but taste like baking powder, far from the cider doughnuts I was hoping to taste. Disappointing.
Hi, I’m sorry to hear you had a hard time with the recipe. As for the thickness, the dough shouldn’t be liquidy, so it is on the thicker side. If it seemed really thick though I would double check your measurements of the wet ingredients. As for the baking soda or powder taste, 3 things could be wrong. One is that you may have put too much. It’s one teaspoon of baking soda and 2 teaspoons of baking powder (make sure you didn’t use tablespoons). The second thing is that your dry ingredients may not have been mixed well enough prior to adding them to the wet ingredients. Sometimes it helps to sift all of your dry ingredients together first. The only other thing I could think is that your baking powder went bad.

Are you sure the 3 1/2 cups of flour isn’t a typo? I just made a batch and the batter is really thick. And they baked up dry. I bake frequently, so I know I got the measurements right.
Hi Debbie, 3 1/2 is correct for 18 doughnuts. If you decide to make them again, you can try baking for less time or you could add a little less flour.
These are super tasty! I spiced up the recipe a little bit and added vanilla and extra butter. I also made an apple cider cream cheese frosting for the top. (1c powdered sugar. 1 tbsp of cream cheese. 2-3 tbsp apple cider. a dash of cinnamon)
The doughnuts were a little dry for my taste. I did extra butter and shortened the cooking time. I will probably use a little bit less flower next time.
Also, I thought it would be yummy to chop up some apple and boil them in the apple cider and add to the doughnuts. I didn’t try that this time, but I probably will next time I make them.
Will definitely use this recipe again!
