Greek Chicken Meatball Rice Bowls – Homemade chicken meatballs stuffed with spices and feta served over lemon rice and fresh veggies, this meal is light, fresh, and hearty!

January is always a time of the year where I go back and forth about still wanting cozy foods and lighter meals. These Greek Chicken Meatball Rice Bowls are both light and fresh, but also really filling and hearty (and look at how perfectly golden they turned out!)!

The meatballs are super simple and made with chicken, spices, and feta. I served them over a bowl of lemony rice and fresh chopped veggies like onions, tomatoes, and red onion. This meal is great for weeknights or also for meal prep.

To make this recipe, you will need:

  • Ground chicken
  • spices like dried chives, dill, garlic and onion powder OR I love to use the Green Goddess seasoning blend from Trader Joe’s.
  • crumbled feta cheese
  • Fresh parsley
  • bread crumbs
  • eggs
  • long grain rice
  • lemons
  • cherry tomatoes
  • red onion
  • cucumber
  • olives (kalamata or black olives)

Recipe Tips and Suggestions:

  • You can swap out the ground chicken for ground turkey if desired for this recipe.
  • I also love to eat this recipe with some tzatziki sauce. It’s nice to mix in with the rice bowl or to dip the chicken meatballs in.
  • Hummus is also a great addition to these bowls!
  • If you don’t want to use rice, couscous or quinoa also work great.
  • I serve these with the rice and meatballs hot, the tomatoes, onion, and cucumbers, can be chilled or at room temp. I personally enjoy and the temperature difference, but you can also saute the veggies for a few minutes in a pan if you want them to be warm too.
  • I like to let people assemble their own bowls. Just toss all the toppings into small bowls or on a nice cutting board.

Greek Chicken Meatball Rice Bowls - Homemade chicken meatballs stuffed with spices and feta served over lemon rice and fresh veggies, this meal is light, fresh, and hearty!

Ingredients

For the meatballs:

  • 1 pound ground chicken
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground dill
  • 1 teaspoon dried chives
  • (OR instead of the 4 above, use 2 teaspoons Green Goddess seasoning)
  • 1/2 cup bread crumbs
  • 2 large eggs
  • 1/2 cup crumbled feta (plus more for garnish)

For the rice bowls:

  • 1 cup long grain rice
  • 2 cups water
  • 2 lemons, divided
  • 2 tablespoons butter
  • 1 cup diced cherry tomatoes
  • 1 cup diced cucumber
  • 1 cup finely diced red onion
  • 1 cup sliced black olives

Instructions

  1. Preheat oven to 400 degrees F. In a bowl, add the ground chicken, spices, bread crumbs, eggs, and feta cheese. Mix with clean hands until well-combined.
  2. Heat large skillet over medium high heat. Add the olive oil. Form the mixture into about 12 meatballs. Add to the pan and brown, about 2 minutes, flipping to brown each side. Remove from the heat.
  3. Transfer the meatballs to a lined baking sheet. Bake the meatballs for about 15-20 minutes or until the internal temperature reaches 165 degrees.
  4. While the meatballs are cooking, prepare the rice. Add to a pan with 2 cups of water and heat over medium low heat until the water is absorbed and rice is cooked.
  5. Add butter and season rice with salt to taste. Zest and juice one lemon into the rice. Stir.
  6. Serve rice alongside the meatballs, diced veggies, additional feta cheese, more lemon slices, hummus or tzatziki sauce, fresh chopped parsley.
