Baked Red Velvet Donuts with cream cheese icing

It’s February. The month of love and Valentines. Is it really terrible that I have bought nothing for my husband and 10,000 things for my daughter?

Red velvet for Valentine’s Day is kind of cliche, but I don’t really care, who doesn’t love red velvet?! Today I have a treat that you can make for your family, friends, co-workers, whoever! Baked Red Velvet Donuts! Sounds good, right? I want to eat like an entire dozen of these. The cake is rich and moist (ughhh, I know, I hate that word too, but it’s the best word to describe these!) and then each donut gets dipped in a cream cheese glaze because you can’t do red velvet without cream cheese frosting. It would just be totally wrong.

Baked Red Velvet Donuts with Cream Cheese Icing - the perfect breakfast for your Valentine! Delicious, moist, and decadent donuts made at home!

Ingredients

For the donuts:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • pinch of salt
  • 1 large egg
  • 1/2 cup vegetable oil
  • 2/3 cup buttermilk
  • 1/2 teaspoon vanilla extract
  • 1-2 teaspoons red gel food coloring

For the cream cheese glaze:

  • 1/4 cup butter, softened
  • 1/4 cup cream cheese softened
  • 1/2 teaspoon vanilla extract
  • 1-1 1/2 cups powdered sugar
  • milk (to thin; as needed (I did about 2-3 tablespoons))
  • sprinkles to decorate

Instructions

  1. Preheat oven to 350 degrees F. Spray a doughnut pan with non-stick spray.
  2. In a mixing bowl, stir together the flour, baking powder and baking soda, sugar, cocoa powder, and salt.
  3. In a separate, larger bowl, stir together the egg, oil, buttermilk, and vanilla until smooth. Stir in the food coloring. Add dry ingredients in with the wet ingredients and mix until just combined, being careful not to overmix.
  4. Spoon the batter into each cavity of the pan. Bake for about 10-15 minutes or until a toothpick inserted comes out clean. Allow the donuts to cool before glazing.
  5. For the glaze, beat together the softened butter and cream cheese until combined in a mixing bowl. Then add in the vanilla, followed by 1 cup of the powdered sugar. If you want a thinner icing, add some milk, 1 tablespoon at at time. To thicken, add some extra powdered sugar. You want the consistency to be thin enough to dip or drizzle on the donuts, but not so thin that it just all runs off.
