Cucumber Cream Cheese Ghosts

You know what’s hard to find? Savory Halloween snacks. I was perusing Pinterest the other day and although I pretty much want to make every thing I saw, I want something savory! Two years ago, my husband gave me a container with about 1000 cookie cutters in it. If I only had the skills and patience to decorate cookies…but alas, I don’t! I have no artistic skills with such things so my cute cookie cutters mostly go unused.

These cucumber cream cheese ghosts? SO stinkin’ adorable and easy to make. They’re like those sweet little tea sandwiches you see at tea parties except they are ghosts which is a hundred times better. I served these at a little get-together I had last weekend and people thought they were actually cookies at first, but were pleasantly surprised when I told them they were actually a savory treat. Thee little guys are great for school lunches and after-school snacks, but are also great for a party to break up the sugary stuff.

Cucumber Cream Cheese Ghosts

Ingredients:

  • loaf of bread
  • ghost shaped cookie cutter
  • whipped cream cheese
  • cucumber, peeled and sliced thin
  • currants

Directions:

1. Preheat oven to 350 degrees F.

2. Using the cookie cutter, cut the ghost shapes out of each slice of bread. Place the ghosts on a baking sheet. Toast for about 5 minutes until lightly golden.

3. Spread a thin layer of the cream cheese on top of each piece of toast (it will help the cucumbers stay in place). Depending on the size of your cookie cutter, you may need to cut some of the cucumbers in half to fit them on the toast. I only placed cucumbers on the main body of the ghosts. Spread more of the cream cheese on top of the cucumbers until they are covered.

4. Take three currants and make the eyes and the mouth. Serve.
