I am really excited today because I get to share one of my favorite shortcut food products with you guys! I have been a fan of MorningStar Farms for years now. Their variety of veggie burgers have been a staple in my freezer and make for the perfect lunch and snacks! Although I am not a vegetarian, I do like to go meatless when I can and I love how easy MorningStar Farms makes this for me. I’m always in a rush out the door in the mornings and even when I’m working at home, I often need to eat a quick lunch so just having to go to the freezer is a lifesaver!The other reason I love MorningStar Farms is because I can eat their products and am not left feeling guilty afterwards because they help me maintain a healthy-eating lifestyle.One of my favorite products is the Original Sausage Patties. There are so many ways to use them up for breakfast, lunch, and dinner! Obviously, I use them the most for breakfast though and am sharing two of my favorite recipes today plus one more way you can incorporate them into your dinner!

First up, we have a veggie scramble. This couldn’t be easier. Just cook up some of the patties and then scramble up some eggs stuffed with your favorite veggies and a sprinkle of cheese on top and you have a nice hearty, protein-packed breakfast ready in about 10 minutes!

My other favorite way to eat the Original Sausage Patties is in a big breakfast sandwich! This sandwich is also super easy to prepare and you can play around with all of your toppings to keep things interesting. Especially with being pregnant now, I like getting the extra boost of protein and nutrients from veggies that I wouldn’t get from just a bowl of cereal!

Veggie Scramble and Breakfast Sandwich

Two easy breakfast recipes made with MoringStar breakfast patties - a hearty breakfast sandwich and a delicous veggie breakfast scramble!

Ingredients

Veggie Scramble:

  • 2 MorningStar Farms Original Sausage patties, cooked according to package directions
  • 1 teaspoon butter or olive oil
  • 1 tablespoon diced yellow onion
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced red bell pepper
  • 1/4 cup shredded cheddar cheese
  • salt and pepper to taste

Breakfast Sandwich:

  • 2 MorningStar Farms Original Sausage patties, cooked according to package directions
  • 1 large egg, scrambled
  • 1/2 avocado, sliced
  • 1 slice of tomato
  • cheddar cheese (or cheese of your choice)
  • chipotle mayo
  • bread of your choice (I like using whole wheat English muffins, but you can use whatever you want!)

Instructions

For the Veggie Scramble:

  1. Take the cooked sausage patties and dice them up with a knife. Set aside.
  2. Add the eggs to a bowl and whisk them together. Season with salt and pepper and set aside. In a saute pan, heat the butter until just melted. Add the onion, green and red pepper and saute for about 3 minutes (I like for mine to be crunchy still, you can cook them longer if desired). Pour in the whisked eggs. Allow the eggs to cook for a minute or so and then scramble them with a spatula until cooked thoroughly. Add the diced sausage patties and stir everything together. Sprinkle some cheese on top. Remove from the heat and let stand for about 30 seconds to allow the cheese to melt more. Then eat it up!

For the Breakfast Sandwich:

  1. To prepare the sandwich, simply layer the sausage patties and toppings in your desired order!
