Strawberry Soda Floats

Like most families with toddlers, whenever my husband and I pour ourselves a drink of anything, we’ve got two little girls tugging on us for a sip. “What do you have in that cup, Daddy?”. Same with food. My husband can’t eat anything without Maddie chasing after him. He often has to use some stealth ninja moves to sneak things by her, probably because the two of them have the same taste in food. I don’t drink soda, but my husband sometimes buys some and I really don’t want the girls to have it. I made these soda floats the other day for Maddie. They use club soda which is pretty harmless! These strawberry soda floats are a fun and fruity twist to the classic root beer float! I actually first made these like 6 years ago on the blog, but I’ve been trying to go back and remake a number of recipes and redo the photos and I’ve had these soda floats on my list for some time! With it starting to feel more like spring, it was finally time!

Strawberry Soda Floats

First things first, you have to make the strawberry syrup. Blend up those strawberries into a puree and then heat it up with some sugar and water and let cool to thicken up. I recommend making the syrup in advance. I often make it days in advance (and a double batch!) and just store in the fridge so we can make them whenever we want! You can use either vanilla ice cream or strawberry ice cream for the floats. Oh, and have I mentioned that the strawberry syrup is also totally perfect on pancakes and waffles?!

I’m loving these for spring and summer and while I originally made these to be kid-friendly, for the grown-ups, you can and totally should add a shot of strawberry vodka for a boozy twist!

Strawberry Soda Floats

A deliciously sweet twist on a root beer float made with fresh homemade strawberry syrup!

Ingredients

  • 1 pint strawberries, stems removed
  • 1/2 cup sugar
  • 1/2 cup water
  • vanilla or strawberry ice cream
  • club soda

Instructions

  1. Place the strawberries into a blender and puree until smooth.
  2. Heat a sauce pan on medium heat, pour in the strawberry puree. Stir in the sugar and water. Bring the mixture to a boil, lower the heat and let simmer for about 3 minutes.
  3. Pour the mixture through a fine mesh strainer over a bowl or large glass. Discard the solids and let the syrup chill for at least a few hours.
  4. To make the floats, pour about 1/4 cup of the syrup into a glass (or to taste). Add a scoop (or two!) of the ice cream and then top with the club soda. Stir to combine and then serve!
