Sour Cream Mashed Potatoes

Are you guys ready for the big day tomorrow? I am! I’m ready to be holed up for the next two days in the kitchen cooking and baking away. I have one more last-minute recipe to share with you today.

Mashed potatoes. Let’s talk about them for a second. I used to really suck at making them. They always used to come out either undercooked or too mealy. I tried and tried and they were just awful. I was the worst mashed potato-maker on the planet. I could not let this be. I mean, it’s mashed potatoes. It shouldn’t be so difficult, right? Mashed potatoes are tricky buggers though. It’s kind of like cooking rice. I still mess rice up. They have to be cooked just right. So I just started making a lot of mashed potatoes. Finally, two years later, I think I got it.

Sour Cream Mashed Potatoes

I have two secrets to making seriously good mashed potatoes. And they will no longer be secrets because I am going to tell you what they are. First, I use red potatoes. Not a typical choice for mashed potatoes, but red potatoes are smoother and creamier than other types of potatoes. And second, I add sour cream. The end result is mashed potatoes that are perfectly creamy and fluffy. You can’t really ask for anything better, right?!
