Snickerdoodle Bars
These soft and chewy Snickerdoodle Bars are so easy to make and perfect for holiday cookie baking! These bars are thick and bursting with sweet cinnamon sugar.
Somehow it’s already December and time to start cookie baking! My soft and chewy snickerdoodles are a holiday favorite and won a few cookie competitions. I decided to adapt that recipe and bake into an easy cookie bar to slice up for my holiday cookie trays this year.
These bars be THICK and glorious. They came out pillowy soft. I adore the balance of the sweetness of the cinnamon sugar in a snickerdoodle with the tang you get from the cream of tartar. Before baking, I sprinkled these with more cinnamon sugar and when baked, it created an almost crust-like topping. The perfect sweet treat!
To make these Snickerdoodle Bars, you need a handful of ingredients:
- Butter – make sure it’s at room temperature for the best results.
- Granulated sugar
- Eggs
- Vanilla extract
- Flour
- Cream of tartar – this is what gives classic snickerdoodles that tasty tangy flavor!
- Cornstarch – it helps make these bars nice and soft.
- Cinnamon – and lots of it!
- Baking powder
- Salt – don’t skip out on adding a pinch of salt when baking to bring out flavors.
Recipe Tips and Suggestions:
- For best results, make sure your butter is at room temperature before creaming with the sugar.
- You do not need to chill this dough before baking.
- Do not skip the cream of tartar and cornstarch in this recipe. They may not be common ingredients, but the cream of tartar is a key ingredient in a snickerdoodle cookie and the cornstarch makes the cookie nice and soft!
- Make sure you allow for the cookie bars to cool completely for cleaner slicing.
- Do not over mix the dough. Mixing the dry ingredients together separately will require less mixing once blended with the wet ingredients.
- You can make these ahead a time and freeze!

Snickerdoodle Bars
Snickerdoodle Bars - Soft, chewy, tangy, and bursting with cinnamon sugar, these bars are a great addition to your holiday baking list! No chilling required.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon cornstarch
- 1 teaspoon cream of tartar
- 1 teaspoon ground cinnamon
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
For the topping:
- 1/3 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350 degrees F. Line an 8x8 baking dish with parchment paper with extra hanging over each side. Set aside.
- Cream together the softened butter and sugar in a large mixing bowl with a mixer, about 2 minutes.
- Beat in the eggs and vanilla extract.
- In a separate bowl, add the flour, cornstarch, cream of tartar, cinnamon, baking powder, and salt. Mix together.
- Add the dry ingredients in with the set ingredents, a little at a time, mixing until just combined.
- Spread the batter evenly in the baking dish.
- In a small bowl, stir together the sugar and cinnamon for the topping and sprinkle evenly over the dough.
- Bake for approximately 30-35 minutes or until a toothpick inserted in the middle comes out clean.
- Allow bars to cool completely before slicing. Store in airtight container or freeze to keep fresh.
