Pomegranate Ginger Mojitos
It’s almost the weekend and it’s been a long week so it’s cocktail time! Today we are talking mojitos! Truth is I’m not really a big mint fan and so I’ve never really been super into mojitos, but when my mom came to visit us last summer, we made them a few times and I developed a new appreciation for them. They are so refreshing!
Although we still have to wait a bit for summer, I mixed up this more wintry twist on the classic mojito – Pomegrante Ginger Mojitos!
This mojito is the perfect cocktail to enjoy as we come up to the end of winter and into spring. It’s perfectly sweet and fruity and I love the combination of pomegranate and ginger together.
The first step will be to make your pomegranate ginger syrup. For the simple syrup, you just need some pom juice, ground ginger, sugar, and fresh lime juice. Let it reduce on the stove for a bit and the syrup is perfection for mixing into cocktails! You can prep the syrup ahead of time if needed.
For the mojito, I used white rum, the pomegranate ginger syrup, and instead of traditional club soda, I went with ginger beer. Since ginger beer has sweetener in it, it obviously makes the drink sweeter than a traditional mojito that just uses club soda. I like the flavor that the ginger beer adds, but you can certainly swap it out for club soda if you would prefer!
One important thing to note about the recipe – the pomegranate ginger simple syrup recipe below yields about a 1/2 cup of the syrup which is enough for up to 4 drinks if you use 2 tablespoons per drink. If you or your guests prefer sweeter drinks, I recommend doubling the syrup. You may also want to consider doubling it if you are entertaining and anticipate making a couple of rounds of these mojitos!
Pomegranate Ginger Mojitos
Pomegranate Ginger Mojitos - The mojito gets a winter twist with pomegranate and ginger! Homemade pomegranate ginger syrup, ginger beer, and pom juice!
Ingredients
For the pomegranate ginger simple syrup:
- 1 cup pomegranate juice
- 1 teaspoon ground ginger
- 1 lime, juiced
- 1/2 cup granulated sugar
For the moijitos:
- fresh mint leaves
- 2 ounces white rum
- 1/2 cup pomegranate juice
- 2 tablespoons syrup
- 1 cup ginger beer
- ice
- pomegranate seeds (for garnish)
Instructions
- Make the syrup. In a saucepan over medium high heat, add the juice, ginger, lime juice, and sugar. Stir together until the sugar is dissolved. Bring the mixture to a light boil and lower heat to medium low. Continue until the liquid has reduced to about half (about 7-9 minutes). Remove from the heat. Store leftover syrup in a covered container in the fridge.
- To make the mojitos, place some fresh mint leaves on the bottom or a tall glass. Use a muddler to muddle the mint leaves. Add the rum, juice, simple syrup, and ginger beer to the glass. Stir until combined, add ice (alternatively, add ice and ingredients to a cocktail shaker, cover, and shake for 15 seconds before pouring into glasses). Garnish with pomegranate seeds and additional leaves of the mint. Serve.
