Pina Colada Smoothie
I think my husband and I have officially reached our limit with the cross-country road trips. It must be our old age. We’ve spent three long days on the road and still have a bit more to go today until we get finally get home. It’s been a long month being away and while I already really miss my family, I am so looking forward to sleeping in my own bed and laying on the couch doing nothing. I always feel like I need a vacation from my vacation.
What I really want right now is a huge pitcher of this pina colada smoothie. I want one every day for all of the days. Always and forever. I love a good pina colada, but they are obviously not healthy when made with amazing and delicious coconut cream and lots of sugary pineapple juice. Oh and of course then there is the rum, which means you can’t really drink them whenever you want.
This pina colada smoothie though? You are good to go. It’s made with light coconut milk, diced pineapple, and some banana to add some extra creaminess. The whole family can enjoy this smoothie and I totally recommend drinking this while sitting out at the pool. I also totally recommend adding a splash (or two) of rum…
Pina Colada Smoothie
Ingredients
- 1 cup light coconut milk
- 3/4 cup frozen or fresh pineapple chunks
- 1/2 medium frozen banana, cut into smaller pieces
- honey or agave nectar to sweeten (optional; to taste)
- 1/2-3/4 cup ice (may want to add if using fresh pineapple; can add none, more, or less depending on desired consistency)
Instructions
- Add all ingredients to a blender and blend until smooth.

I can definitely picture myself lying by a pool sipping on one of these guys (with rum!)….
“A vacation from my vacation” – lol, love that statement! Sometimes vacays turn our to be really tiring that all you want to do is feel the comfort of your own bed…I bet the Pinacolada gave you the comfort that you needed!

I wish it were more socially acceptable to drink rum whenever you wanted, because obvi. But instead I’ll settle for this huge, frosty pina colada smoothie. Looks amazing, Steph! (oh, and I totally get your needing a vacation after a vacation. Makes so much sense!)
haha I usually feel like I need a vacation from my vacation. We got back a week ago from a road trip up to Boston and I definitely feel like I need a break to recover from all that time in the car!
This smoothie sounds awesome – I’ve been having a smoothie most mornings – I need to switch it up and try this!
