Piña colada overnight oats in a white bowl with toasted coconut on top

Piña coladas are truly one of my favorite frozen cocktails to drink. That combo of creamy coconut, pineapple juice (which I don’t normally care for on its own), and of course, the rum just tastes exactly how summer should taste.

As much as I love a good piña colada, I rarely make them since my husband doesn’t care for them and of course, they tend to be a heavier cocktail in terms of calories and such. These piña colada overnight oats are the perfect way to enjoy the flavors of this popular cocktail for both breakfast and for less calories. It’s a win win situation, right?

All it takes is about five minutes the night before to mix these up. Stick ’em in the fridge and they will be ready to be devoured in the morning!

Recipe Tips and Suggestions:

  • As stated in the title, these are “overnight oats” so they need time to soak in order to soften enough to be eaten. I have found that at least 4 hours can sometimes be enough, but make sure you prep them the night before you want to eat them or at least a number of hours in advance.
  • For ultimate piña colada goodness, I like to use both coconut yogurt and coconut milk in the mixture. You can use yogurt actually made with coconut milk (and comes unsweetened, if desired) or you can use coconut flavored yogurt. Use whichever fits your tastes and diet!
  • I like to top my oats with toasted coconut. To do this, add about 1/2 cup of sweetened coconut to a fry pan over medium high heat and stir until the coconut is toasted, about 5 minutes. Store in an airtight jar or baggie.
  • You can prep larger batches of the oats if you would like. They stay good for about 3-4 days in the fridge.
