Peanut Butter Banana Trail Mix
Welcome to Road Trip Week! Or actually, it might even be Road Trip Week(s). Hubs and I are off on another cross-country road trip to Florida to spend time with my family. We may end up driving to more places to see more family, so we decided to drive to avoid crazy airline ticket prices. And also, we are masochists and love to torture ourselves with endless driving.
Summer is a big time for vacations and road trips! Whether you’re just driving for a few hours, or a few days, I thought it would be fun to share some of my favorite recipes for road snacks along with some tips to keep things healthy while you’re on the road so I am going to do a little road trip series over the next couple of weeks!
Road trips are often synonymous with eating a lot of junk food. When you have done as many cross-country trips as my husband and I have done, junk food every time and all of the time just doesn’t fly. I spent yesterday in the kitchen prepping lots of homemade snacks for us to take in the car. It’s worth the extra time to prep some of our road food myself.
I am going to start this series off with one of my favorite trail mixes: Peanut Butter Banana Trail Mix! Peanut butter and bananas are a match made in heaven. Trail mix can be tricky. It sounds healthy, but it can be loaded with sugar and salt if you’re not careful, which is why I prefer to make my own. I use either raw nuts or lightly salted to keep the sodium down. I always like to include almonds for extra protein. Dried fruits are a great addition, but can add a lot of sugar, so I use them with caution, only including dried bananas in this version. Then I added some peanut butter chips and a small handful of semi-sweet chocolate chips. I tend to fill my trail mixes mostly with nuts, but I decided not to give exact measurements for this recipe because you can really add as much or as little as you want of each ingredient!
Peanut Butter Banana Trail Mix
This delicious snack mix is made with dried bananas, nuts, chocolate chips, and peanut butter chips! A dream flavor combo great for adults and kids!
Ingredients
- 2 cups raw almonds
- 1 cups peanuts (raw or lightly salted)
- 1 cup dried banana chips
- 2/3 cup peanut butter chips
- 2/3 chocolate chips (optional)
Instructions
- Add all ingredients in a bowl or gallon-sized ziplock bag and shake or stir to combine. Store in air-tight containers or ziplock bags.
