Peach season is here and it’s truly one of my favorite things about summer! Whether I just bite straight into them or eat them as a dessert or other baked goods, peaches just make me happy!

I also love to use peaches in more savory recipes like my chicken, peach, and arugula quesadillas. I made this Peach and Tomato Salad a few weeks ago and was so in love, I have to share it here!

Peaches and tomatoes may seem like sort of an odd combo if you’ve never ate them together, but I promise you they work very well together here! This salad is made with chopped cherry tomatoes, diced peaches, fresh corn shaved off the cobb, red onion, and fresh basil. So simple!

For the dressing, I just mixed up some fresh-squeezed lemon juice and a couple of teaspoons of honey. This salad is really light and refreshing. You can eat it on it’s own, but it would also be fabulous paired with some grilled chicken or salmon and you can serve it sort as a salsa but just chopping the tomatoes and peaches a bit smaller.

You can mix this up and eat it right away, however, I prefer it slightly chilled, so I recommend letting it sit in the fridge for about 30 minutes before serving!

I contemplated adding some avocado to this salad, but wanted it to be really light. If you want to add avocado or other salad fixings, go for it!

Peach and Tomato Salad - A lovely summer salad with fresh cherry tomatoes, peaches, corn, and basil. Tossed in a lemony honey dressing!

Ingredients

  • 3 cups cherry tomatoes, halved
  • 2-3 peaches, pitted and cubed
  • 2/3 cup diced red onion
  • 2 corn on the cob, kernels shaved off cob
  • 1/2 cup fresh chopped basil
  • 2 lemons, juiced
  • 2 tablespoons honey
  • salt to taste

Instructions

  1. In a bowl, add the chopped tomatoes, peaches, red onion, corn, and basil and stir together.
  2. In a smaller bowl, whisk the lemon juice and honey together. Add additional honey if desired. Drizzle over the tomato and peach mixture and toss to combine. Season with salt to taste. Chill for 30 minutes. Serve.
