Mediterranean Roasted Vegetables
It’s Fridayyyyy! And a long weekend! Can’t ask for much more! I’m excited to sleep in, having a big glass of wine, and do some serious cooking!
My friends over at STAR Fine Foods recently sent me bottles of their newest cooking oils and I was so excited to dig in! I got bottles of the Grilling Cuisine Oil, Asian Cuisine Oil, Italian Cuisine Oil, and then Mediterranean Cuisine Oil. I wanted to cook with all of them, but then I realized it might be weird to use all four in one recipe, so I ended up opening the Mediterranean oil first. I was really intrigued by the chili pepper in it. I made the right choice. It’s bold and peppery, but not overpowering!
This oil would pair perfectly with chicken or beef, but it also works really with roasted veggies! I chopped up some of my faves and tossed them with some of this delicious oil, some salt and pepper and just shoved them in the oven and that was it! The great thing about these veggies is you can eat them plain as a side dish, over rice or couscous, in a hoagie roll with some melted cheese on top, or you can even use it as a pizza topping! Lots of great possibilities here!
Mediterranean Roasted Vegetables
Mediterranean Roasted Vegetables - Easy roasted veggies with a Mediterranean twist! Serve as a side dish, over couscous, as a pizza topping!
Ingredients
- 1/2 eggplant, top removed and cut into bite-size pieces
- 1 red bell pepper, seeded and diced
- 1 small red or yellow onion, diced
- 1 large zucchini, cut into 1/2-inch rounds
- 2 large carrots, peeled and sliced into 1/2-inch thick slices
- 3 tablespoons STAR Fine Foods Mediterranean Cuisine Cooking Oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
- In a large bowl, add all of the prepared vegetables along with the cooking oil, salt, and pepper. Toss to combine. Roast vegetables for about 15-20 minutes. Add additional salt and pepper to taste if desired. Serve vegetables as a side dish, over chicken or beef, as a pizza topping, or in a hoagie roll with melted cheese!

I can’t decide between the zucchini or peppers as my favorite roasted vegetable in this dish so I’ll just say its both.
I’m partial to Star’s red vinegar. It’s usually the cheapest one and its actually quite good.
