Crunchy Baked Ranch Chickpeas
Chickpeas are one of those ingredients that I like to have stocked in my pantry at all times. I love being able to make a quick hummus, topping for salads, or for baking in the oven for a crunchy snack!
I’ve been obsessed with these taco chickpeas for a while and thought I’d give a new recipe a try with another one of my favorite flavors – ranch!
These couldn’t be easier to make. After draining, I do like to take the added step of rubbing the chickpeas with a towel to work off some of the outer coating. I find the chickpeas get crunchier without it, but it doesn’t have to be perfect and you can skip that step if you’d like!
The seasoning is just some olive oil, salt, and ranch seasoning. You can buy the packaged ranch seasoning or make it homemade. Then the chickpeas go into the oven for about 25 minutes or so to bake up. I like to flip them about halfway through and that’s it!
One other thing to note – these are really best enjoyed fresh out of the oven. They will lose their crispiness the longer they sit so I recommend making them when you actually plan to eat them.
These ranch chickpeas are great for a snack on their own as a healthier alternative to chips! They also make for the perfect topping for salads!
Crunchy Baked Ranch Chickpeas
An easy low-carb snack alternative to chips. Chickpeas are tossed in some olive oil and ranch seasoning and baked until crispy!
Ingredients
- 1 (15-ounce) can unseasoned chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 2 tablespoons ranch seasoning (packaged or homemade)
- 1/4 teaspoon salt
Instructions
- Preheat oven to 400 degrees F. Line a small baking sheet with parchment paper and set aside. Grab a clean dish towel and arrange the rinsed chickpeas in the center in a single layer. Fold the towel over the chickpeas and gently rub back and forth until the outer lining on the chickpeas comes off most of the chickpeas (it's okay if you don't get them all).
- Transfer the chickpeas in a bowl. Drizzle the olive oil over the chickpeas, followed by the ranch seasoning and salt. Stir until the chickpeas are coated in the seasoning. Transfer the chickpeas to the baking sheet in a single layer. Bake for about 20-25 minutes or until crispy and golden, flipping with a spatula after about 10 minutes. Add additional seasonings to taste if desired. Let cool for about 5 minutes and enjoy!
Notes
The chickpeas are best enjoyed fresh after baking. They will soften as time goes on and loose their freshness and crispiness.
