Crockpot Pot Roast
Let’s pretend it’s Friday for a second. First, because Friday is the best, but also, this pot roast is another flashback post for me so we are going to pretend today is Flashback Friday. I’ve made this crockpot pot roast numerous times over the years and so I knew it would be the perfect main dish to share for Crocktoberfest! Pot roast is one of those comfort dishes to me. It’s warm and hearty and the meat is so tender it just falls off the fork. One of my most favorite things about this recipe is the gravy. It’s so flavorful! I love that I can throw everything in so quickly and come back to a great meal that tastes like I spent so long making it!
This is also one of those recipes that my husband can easily make which is perfect for me when I have longer days at work. My husband and I like to have mashed potatoes with this, so it’s not too bad if I just have to make a side dish when I get home. You could also toss some in the slow cooker if you want to save even more time.
Crockpot Pot Roast
Crockpot Pot Roast - the ultimate comfort food made right in your slow cooker! The most tender pot roast, every single time!
Ingredients
- 2 tablespoons extra virgin olive oil
- salt and pepper
- 3 pounds pot roast, trimmed
- 2 cans condensed 98% fat-free cream of mushroom soup
- 1 package onion soup mix
- 3/4 cup red wine
- 1/2 cup water
Instructions
- In a pan, heat the olive oil over medium heat. Sprinkle salt and pepper to both sides of roast. Sear meat on both sides until brown, about 5-7 minutes.
- In slow cooker, mix together the soup, onion soup mix, wine, and water. Add roast and cook on low setting for 7-8 hours or on high setting for 4-5 hours. If adding carrots, I recommend adding these during the last 1 1/2-2 hours of cooking.

My husband has been asking me to make pot roast forever and for some reason I just keep ignoring his request! haha Now, I can either make this and be nice or push the recipe in his direction and tell him that your husband does it by himself… hmmm… not sure how well that would go over : )
Ah-mazzing! Love this kind of stick to your ribs comfort food. :) Really enjoying this slow cooker event. :)
I love how easy this sounds Stephanie – and the pictures are gorgeous!
PS-Can your husband teach my husband how to cook things in the crockpot? Lance practically refuses claiming he’ll “mess everything up” haha :)
I am all about the Crock Pot right now. Yes one side dish is not too much to ask when you have a piece of beef and gravy waiting.

We’re meat & Potato lovers in this house! I bet the red wine in this recipe ads a ton of great flavor!
I have never thought of doing a pot roast in a crock pot…I don’t know why…it looks and sounds delicious! I’m sure it was super moist after all that low and long cooking too!
This looks great! I’ve never used cream of mushroom soup for a roast in the crock pot…definitely trying this recipe soon!
