Coconut Margaritas

I know I post a lot of cocktails on this blog. I just love to mix up fun drinks for parties. And sometimes, you just need a drink that will make you feel like you are on a vacation on a beautiful tropical island and not in the middle of grant writing.

The good news is that I am finally starting to see a light at the end of the grant tunnel and I think I’m going to have to celebrate with a ginormous pitcher of these creamy coconut margaritas!

Coconut Margaritas

I lovveeeee me some Margaritas! The flavor possibilities are endless! While these coconut margs are not super low cal based on the coconut cream, but sometimes you have to just throw your arms up and say, whatever!

These frozen coconut margaritas are everything I dreamed they could be and more. They are nice and thick and fluffy! They have a good balance of liquor versus coconut cream and are not overly sweet. To sweeten them, I put in a couple of good squeezes of agave nectar, but it’s not required and you can easily adjust the sweetness to your desired taste. Add some pineapple juice to transform these into Pina colada margaritas!

These creamy and boozy margaritas are the perfect drink for sipping by the pool or parties!

Ingredients

  • 1 can (15-ounces) coconut cream
  • 3/4 cup clear tequila
  • 1/2 cup triple sec
  • 1-2 limes, juiced
  • agave nectar to sweeten (to taste)
  • approx. 2 cups of ice
  • toasted shredded coconut and fresh lime wedges for garnish

Instructions

  1. Add all the of ingredients to a blender and blend until smooth. Add more ice if needed to thicken. Pour into glasses. Garnish with fresh lime wedges and toasted coconut.
