Citrus Kale Chips
A couple of weeks ago, I got two awesome packages. One was from my good friends at OXO sent me a couple of their new Green Saver containers! These Green Savers are the solution to your produce problems as they are built to keep all of your produce nice and fresh! My husband isn’t a big fruit and veggie eater so I am always dealing with things going bad in my fridge if I don’t eat them quickly enough!
There are three main reasons why produce goes bad: 1. Produce gives off ethylene gas, 2. improper airflow in packaging, and 3. uncontrolled humidity. The Green Savers have a carbon filter that absorbs the gas, and elevated basket to promote better air flow, and a vent on top to control humidity. Pretty cool, huh?
And then I received another package from Melissa’s Produce! They sent me a bag of their Kale Sprouts and a few packages of their Kumquats! The kumquats were a first for me because I have never tried them! They are like tiny little oranges. Everything was so fresh and vibrant. They both stayed really fresh in the Green Savers.
I had a hankering for some chips last week, but instead I thought I would put this fresh produce to good use and made myself a batch of crispy and citrusy kale chips! I love kale chips. They are easy to prepare and actually do satisfy my chip cravings! This citrus version is light and flavorful! The perfect snack!
- 4 cups chopped kale leaves
- 1 1/2 tablespoons extra virgin olive oil
- 1/4 teaspoon garlic powder
- 2 tablespoons kumquat (or orange) zest
- 2 tablespoons fresh kumquat (or orange) juice
- 1/4-1/2 teaspoon salt (adjust for how salty you prefer)
- Preheat oven to 350 F. Line a cookie sheet with parchment paper.
- Layer the kale leaves in a single layer on the pan. In a small bowl, whisk together the olive oil, kumquat zest and juice, garlic powder, and the salt. Drizzle over the kale leaves. Use your hands to massage the dressing into all of the kale leaves. Bake for 10-13 minutes until crisp, but still green.
