I recently learned that I don’t eat enough protein in my diet. I’ve been trying to add small protein shakes into my diet, but sometimes those get a bit boring and I started thinking about other ways I could incorporate protein powder into my diet and I’ve always seen other baking recipes with it so I gave it a go with these Chocolate Protein Blender Muffins!

The best part about these muffins (aside from the fact that they are totally scrumptious, of course) is that you mix the batter in a blender! Just dump in all of the ingredients and blend until smooth, pour into a muffin pan, and bake! If you don’t have a blender, that’s okay, you can also mix them up the good old fashioned way in a mixing bowl.

Tips and Substitutions:

  • I sweetened these with honey, but you could also use maple syrup or stevia!
  • You can use either vanilla or chocolate protein powder. Or, if you don’t have protein powder, just replace the 1/4 cup with extra almond flour.
  • You can make these without a blender if you don’t have one or don’t feel yours will blend the batter sufficiently. Just make sure you mash the banana with a fork before adding in the rest of the ingredients.
  • The nutrition info includes chocolate chips. I like to just sprinkle some on top before baking. You can add more if you want to make them more appealing for kiddos or leave them out to cut calories.

Chocolate Protein Blender Muffins

Chocolate Protein Blender Muffins - These simple chocolate muffins are gluten-free, loaded with protein, and contains no added sugar!

Ingredients

  • 1 medium ripe banana, peeled and broken into smaller pieces
  • 1/2 cup honey
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla
  • 1/4 cup almond milk
  • 1 1/2 cups almond flour
  • 1/3 cup cocoa powder
  • 4 scoops chocolate protein powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup semi-sweet chocolate chips (optional)
  • cooking spray

Instructions

  1. Preheat oven to 350 degrees F. Spray a muffin tin with non-stick spray and set aside.
  2. Add all ingredients to a blender. Blend until just combined. Do not over-mix. Divide the batter amongst 10 muffin cavities. Sprinkle some chocolate chips on top of each muffin.
  3. Bake muffins for 20-25 minutes or until a toothpick inserted comes out clean.
