Chocolate Protein Blender Muffins
I recently learned that I don’t eat enough protein in my diet. I’ve been trying to add small protein shakes into my diet, but sometimes those get a bit boring and I started thinking about other ways I could incorporate protein powder into my diet and I’ve always seen other baking recipes with it so I gave it a go with these Chocolate Protein Blender Muffins!
The best part about these muffins (aside from the fact that they are totally scrumptious, of course) is that you mix the batter in a blender! Just dump in all of the ingredients and blend until smooth, pour into a muffin pan, and bake! If you don’t have a blender, that’s okay, you can also mix them up the good old fashioned way in a mixing bowl.
Tips and Substitutions:
- I sweetened these with honey, but you could also use maple syrup or stevia!
- You can use either vanilla or chocolate protein powder. Or, if you don’t have protein powder, just replace the 1/4 cup with extra almond flour.
- You can make these without a blender if you don’t have one or don’t feel yours will blend the batter sufficiently. Just make sure you mash the banana with a fork before adding in the rest of the ingredients.
- The nutrition info includes chocolate chips. I like to just sprinkle some on top before baking. You can add more if you want to make them more appealing for kiddos or leave them out to cut calories.
