Baked Buffalo Chicken Taquitos
I’m tossing another Super Bowl dish at ya. Baked Buffalo Chicken Taquitos. Go long.
I’m so lame. I’m sorry.
My darling husband isn’t much for appetizer or snack-type foods. Is he crazy?!! I can make a meal out of appetizers so most of the appetizers I make, he doesn’t touch. I know a few things that he can’t resist though and one of those things is buffalo chicken. The man loves all things buffalo chicken. Last year, I made these buffalo chicken bites. This year, it’s buffalo chicken taquitos. Because my man also loves taquitos. And well, so do I.
While taquitos are usually fried, I don’t do frying in this house. First, I’m scared that I will burn myself or my house down. And second, it adds way more fat and calories. I would rather eat a bunch of appetizers instead of just one so if I can have a few lower fat appetizers, I am a happy girl! So I opted to bake these. The filling is easy and lower in fat as well. I dipped mine in ranch dressing and my buffalo fanatic husband dipped his in additional buffalo sauce. He can never get enough!
Baked Buffalo Chicken Taquitos
Baked Buffalo Chicken Taquitos- Low in fat, simple, and perfect for your Super Bowl party! Creamy, cheesy, and loaded with buffalo flavor!
Ingredients
- 4 ounces reduced-fat cream cheese
- 1/3 cup buffalo sauce (can add more if desired)
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 2 1/2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese (colby and monterey jack cheese also works well)
- 12 6-inch flour tortillas
- cooking spray
- ranch dressing, blue cheese dressing, sour cream (for dipping)
Instructions
- Preheat oven to 375 degrees. Prepare a large baking sheet with parchment paper or a baking mat.
- In a bowl, stir together the cream cheese and buffalo sauce. Then mix in the chicken, garlic and onion powders, and the cheese until everything is well-combined. If it seems dry, you can add in more buffalo sauce if desired.
- Place the tortillas on a microwavable plate. Place a damp paper towel on top and microwave for about 20 seconds.
- Spoon about 2-3 tablespoons of the chicken mixture down the middle of each tortilla. Roll it up nice and tight and place the on the baking sheet seam-side down. Spray the tops with some cooking spray.
- Bake for about 15 minutes. Flip over and spray with a little more of the spray. Bake for another 5 minutes or until golden brown.

My kids love chicken taquitos…. I always buy a big box from Costco as after school snacks and it’s finished in a week. These look so much yummier. :) We are snack lovers in our house… these would simply disappear. :)

I’m not quite a fan for Taquitos. But Buffalo Chicken Taquitos? I’m jumping all in. I guess I don’t like Taquitos because they usually don’t taste much. I bet these Buffalo Chicken version is much better! :) These are perfect game day treats.
I heart buffalo sauce and put it on nearly everything! I’m not ashamed to say I could put down an entire batch of these, no problem!

Do you cook the chicken first or no?
Hi Hanna, yes, make sure the chicken if fully cooked first. I like to use rotisserie chicken from the grocery store and just shred it myself.
