Arugula Walnut Pesto
Say hello to my new favorite pesto, arugula walnut pesto! I’m going to go so far as to say that I am a bit of a pesto fanatic. When made with really fresh ingredients, it’s so incredibly flavorful and I love putting it not only on pasta, but potatoes, chicken or fish, or as a spread on a crostini or sandwich.
Like cilantro, people seem to either love or hate arugula. I’m in the love it camp (I also am firmly in the love it camp for cilantro). I think some people think it has a soapy taste (like cilantro), but I would describe it as being more peppery and bitter, but totally in a good way!
