Adobo Lime Chicken
Adobo seasoning is one of my favorite spice blends to keep in my spice cabinet. “Adobo” comes from the Spanish word “adobar” which literally means “to marinate” and it is truly the perfect spice blend for just that. Adobo seasoning typically includes salt, garlic powder, black pepper, onion powder, oregano, and cumin. These spices all perfectly lend themselves to Spanish and Mexican recipes such as this ridiculously simple and flavorful Adobo Lime Chicken!
This is one of my go-to marinades for meat for the summer and goes well with chicken, fish, or even steak. This chicken is perfect for your next taco or burrito bowl night, but it’s also perfect for meal prepping because it goes well in a variety of other dishes including salads or wraps! Just store the leftovers in an airtight container to use throughout the week however you’d like to use it! I prefer the flavor by grilling the chicken outside or at least on a grill pan, but if you don’t have access to a grill or grill pan, you can also saute it in a pan or baked in the oven. You really can’t go wrong with this marinade.
Recipe Tips and Suggestions:
- I like to let the chicken sit in the marinade for a least 2 hours. You can do it even longer, but be sure to plan enough time to marinate the chicken for maximum flavor!
- In addition to the adobo seasoning, I also add a bit of chili powder and paprika. You can skip these if you’d like, but I like the additional flavor they add.
- This chicken can be served in a variety of ways – tacos, burritos, or salads. Or you can leave it undiced and serve it with veggies and rice. So many possibilities, but of course tacos are my favorite way to enjoy this chicken!
Adobo Lime Chicken
Adobo Lime Chicken - This simple and versatile marinade is perfect for Spanish and Mexican dishes and can be served with tacos, bowls, salads, and much more!
Ingredients
- 1 pound boneless, skinless chicken breast, sliced in half lengthwise
- 3 tablespoons olive oil
- 1 tablespoon Adobo seasoning
- 1/4 teaspoon salt (optional)
- 1/2 teaspoon paprika
- 1 teaspoon chili powder
- 1-2 limes, juiced
Instructions
- Add the sliced chicken breast into a baking dish or freezer-size bag and set aside.
- In bowl, whisk together the oil, all seasonings, and lime juice. Stir in additional salt if desired. Pour over the chicken breast. Mix to coat chicken in marinade. Seal bag or cover dish with foil and refrigerate for approximately 2 hours.
- Cook as needed. If using grill, brush grill with oil and heat on medium high heat. Grill on each side for 3-4 minutes or until cooked thoroughly. Let stand 5 minutes before slicing or dicing. Serve as desired.
