1. I’ve lived in Cleveland, OH, Los Angeles, CA, Orlando, FL, and now Tallahassee, FL.
2. I met my husband in high school when I was in the 9th grade and he was in the 10th grade. We had science class together. He sat behind me and bugged me all the time. I only pretended to hate it sometimes. We lost touch when I moved to Florida after I finished the 10th grade and then we reconnected again through MySpace back when MySpace was still cool and the rest is history!
3. I have two brothers and 1 sister. One brother is only 2 years younger than me, but my other brother and sister are 15 years younger than me!
4. I hate mustard and white chocolate. Hate them both. Sorry. However, I WILL eat a white chocolate macadamia nut cookie. I don’t know why.
5. I have a sick addiction to all things Coach. Bags, shoes, accessories, jewelry, everything. I especially love the key chains they make that are different animals. Every time a new one is released, my husband and I decide if it is one that I HAVE to have.
6. I also love anything owl-related.
7. My other addiction is nail polish. I have so many, it’s not even funny. Letting me lose in Ulta is a dangerous, dangerous thing to do…

Remember last week when I shared my Strawberry Sherbet recipe? Well, after making that deliciousness, I had a lot of strawberries left over. I decided to keep the frozen treats coming.
So strawberry sorbet it was. But, not just any old strawberry sorbet, this one has champagne in it. Champagne makes everything better, especially when combined with strawberries. I’m definitely making this one again, except next time, I’m doubling the recipe and adding more champagne. It’s like happy hour and dessert all in one. Happy Friday.
Do you ever have one of those weekends where come Sunday night, you don’t really know what the heck you spent the entire weekend doing? Kind of like when you read a page in a book and when you get to the end, you have no idea what you just read? That was me this weekend. I don’t think I did anything. Aside from cooking, grocery shopping, and lunch with the hubs, I did a whole lot of nothing. I wasn’t feeling too hot on Friday night and ended up going to bed really early. I know, I’m so wild.
Oh, and how annoying is it when you have a recipe all planned out and when you get to the store, they don’t have one of the ingredients you need? I had that issue with this recipe. My original plan was to use mahi, but the store had none. Sigh. I called two other grocery stores and neither of them had mahi! What. The. Heck?! Since I already bought all of my other ingredients the previous day, this recipe WAS going to happen. So, I surveyed the fish they did have and decided on tilapia, which actually worked really well. This dish is nice and light and really refreshing with the mango pineapple salsa! I served it over some rice with a hint of lime and with some roasted plantains! Yum!

Ok, now onto the cookies. No, you did not read the title wrong. ‘Cookie’ and ‘breakfast’ in the same title. Yup, these cookies are for breakfast my friends. Who doesn’t want a cookie for breakfast?! You’re probably thinking that these must be really sugary and fattening and would not make an acceptable breakfast, but don’t be fooled, these cookies are nutritious, and contain no butter or eggs or added sugar! And for all you lactose sensitive peeps, these cookies are also dairy free! Pack these cookies for a breakfast-on-the-go or as an afternoon snack. They will fill you up without all the guilt of a “regular” cookie! Not only will the kids love them, but they are adult friendly too. I like to take them in the car to eat when I don’t have time to eat breakfast at home.
Happy Hump Day! Spring is here. This means it is time for some frozen goodness. I bought a huge container of strawberries over the weekend and there was no way I was going to get through them all before they go bad. I was just going to make sorbet, but then I started thinking about sherbet. Seriously, the last time I had a bowl of sherbet, I was probably a teenager. As an adult, I’ve only enjoyed sherbet in the champagne punch I make which is totally awesome and is really the best way to enjoy sherbet. But, ok, a bowl of homemade strawberry sherbet also sounds pretty good to me.
The cool thing about sherbet is that it is a happy medium between ice cream and sorbet. No eggs yolks or heavy cream needed, but with some low-fat milk, you get a nice fruity treat with a touch of creaminess which makes it a great, lower fat option for when you are craving a frozen treat! Oh, and I still had a ton of strawberries left so I made sorbet anyway! I’ll post that recipe next week!
I have a new favorite pizza. If I could, I would change my facebook status to say that I am in a relationship with this pizza (sorry husband), that’s how much I love this pizza.
It’s been in high 80’s here in sunny Florida. Spring has arrived. And while I despise the hot weather (mostly because of the humidity that comes with it here), I have been craving fruits, vegetables, and salads like it’s nobody’s business. We like to make homemade pizzas on the the weekend. I wanted some pizza, but I also wanted a big salad. I love to have salads with pizza. I love to dip the crust in dressing and I always find myself putting my salad on my pizza. So why not just make a salad pizza?! This Greek salad grilled pizza was the perfect choice. It has a nice thin, crispy crust and it’s piled high with a simple, but delicious, Greek salad! The vinaigrette is light, but adds great flavor to the salad. It just screams spring and summer!
