I wish I had a gazillion dollars. Yes, a gazillion. If I had a gazillion dollars, I would pay people to pack and move all our belongings and then when we get to Arizona, they would unpack for me and buy furniture and decorate and get everything all set up and it would be exactly the way I want it to be. Oh, and of course, our cars would just be brought there. Oh, and if anybody has a connection with someone who has access to a teleporter, that would be so incredibly wonderful. I would also settle for just winning the lottery, 125 million dollars would suffice. I mean, I’m not asking that for much here, people. And all that leftover money would go towards paying student loans and buying more Coach bags, btdubs.
I officially had my first panic attack yesterday. It occurred to me that we have less than 2 weeks to pack up our apartment and we have yet to pack even one box. Not even one. I started being all cranky and my husband said I was totally unbearable. I came home this afternoon from work to find that my sweet husband started packing all of our books and DVDs and broke down the cheap bookshelves. Even though it wasn’t a lot of boxes, just seeing boxes piled in the corner makes me feel a little better. We are going to be in a packing frenzy next week. So, yeah…if someone wants to give me a gazillion or at least 125 million dollars…
Cooking has been very useful in helping me procrastinate from packing. Figs were on sale at my grocery store last week so I had two big containers to go through. First up, pizza! Fig, prosciutto, and arugula pizza to be exact. This pizza has such an interesting flavor combo. You get that sweetness from the figs, saltiness from the prosciutto, and then a bitterness from the arugula, which I also doused in balsamic vinaigrette dressing. I just used mozzarella cheese since that is what I had on hand, but blue cheese crumbles or goat cheese would also be wonderful!

These cupcakes might be the best thing that ever happened. Ever. When my husband eats one, he says he is the luckiest man alive. That’s pretty serious!
I don’t consider myself the best baker so I like to take a shortcut and use a box mix, but I add more stuff to the recipe like pudding mix and sour cream which make them taste more homemade. These cupcakes are really all about the cookie dough frosting. The frosting contains no eggs so it is completely safe to eat raw. I’m not gonna lie, there have been times where I am tempted just to make some of this frosting to eat straight from the bowl! If you would rather do vanilla cupcakes, the frosting would be great with those as well so you can really use whatever cupcake flavor you want.
Why can’t every weekend be 3 days?! Three glorious days! This weekend was filled with a lot of nothingness. It’s the first weekend I’ve had in a long time filled with nothingness and it was wonderful! This is officially the start of my favorite time of the year! Although it is still like a gazillion degrees outside, I am all about getting ready for fall. The countdown has begun until October 1st arrives so my husband and I can put up Halloween decorations without looking like freaks. And pumpkin! Yay for all things pumpkin!
Oh, and we finally got a place to live in Arizona! We will be moving in the next few weeks so things are about to get really crazy again. I wish I could fast forward through the moving part and just be in the new place with everything unpacked and the Halloween decorations up (yeah, seriously, we really love Halloween)!
In between watching reruns of Ally McBeal and How I Met Your Mother on Netflix, I did manage to spend some time in the kitchen. We are nearing the end of our Skinny Bitch series, but we still have a few recipes left for you! This week, Jennifer chose the veggie pot pies! I haven’t had a pot pie in a very long time and I have actually never made one so I was excited to make this recipe! These pot pies are super easy to make (especially if you use refrigerated dough like I did and have no shame in using!). My dough-forming skills need some serious work, but I promise these are still delicious!
Wow, where did this week go? It just flew by! What are my plans for the weekend? Well, it is time to start purging things in our apartment to get ready for our big move. I love purging. It feels so nice to get rid of things I don’t need or want anymore. But, packing…oh packing…Not my favorite. If any of you want to come help pack, I will pay you in food. Maybe these muffins…
You know I love all things lemon so what could be better than lemon muffins?! These muffins are a little unique because they are not made with butter or vegetable oil, they are made with olive oil! If I could make the recipe better, I would say add a little more sugar and more lemon which is what I have done with the recipe for you. I only used 1/2 cup sugar and while I usually don’t like a lot of sweetness, I felt these needed more. To compensate, I added some lemon glaze which actually ended up making these muffins even better. But, if you don’t want the glaze, you could certainly leave it out! Oh, and don’t overmix. I always do this…baking is just not my thang, but I try…
Hi all! I’m back from Phoenix. It was a crazy week. Unfortunately, my house hunting was not so fruitful. I did sign a lease for a townhouse that I liked, but after really thinking about and measuring, I realized that our bedroom furniture would not fit very well because the bedrooms were too small. Our king size bed would take up the whole room. Seriously. And let me tell you right now, we are NOT giving up our king size bed. It is glorious. Our dresser and nightstands aren’t very big, but it would be a really tight squeeze and I think it would just drive us nuts. So, we took back the offer and are now holding out for something better. It’s a little scary since we are supposed to move in one month, but I am trying to remain positive that something will come up!
I wanted to make a nice dinner for my husband this weekend after his week of being a bachelor where he ate a bunch of frozen stuff all week long. Although fall is fast-approaching, it is still a gazillion degrees here in FL so grilling was the way to go! I love meals where you can throw everything on the grill! This meal is so simple. The marinade for the steak is so tasty! I also grilled some fresh corn on the cob and topped it with some extra of the chive butter that I used for the potatoes.
Ok, so I think I might be the worst blogger on the planet right now! I’ve been so neglectful! Wahhh, I’m sorry my loves!! As you know, things have been quite crazy in my world lately. This week I am in Phoenix! I had orientation at ASU for my job yesterday and today I will be finding a place to live! I love house hunting because I can pretend that I am on an episode of House Hunters. I’m that annoying lady who complains too much and nitpicks at every little thing, like, “this kitchen is too small. This closet is too small. What is that on the ceiling there? That paint color is horrendous.” But, as much as I love house hunting, I only have two days to find a place to live! Yes, 1. 2. Two. We are just looking to rent something for now, but I still want it to be nice and Hubs is not here to help me out! Oh, the pressure!!!
Despite the madness, I still have a yummy recipe to share with you all! Living in Florida and soon, Arizona, means that lemonade is a requirement for survival. After making sparkling strawberry lemonade, I really wanted to try another variation. Raspberries and peaches are a great combo! It’s not overly sweet which is important for me as I don’t like really sweet drinks. Oh, and of course, it’s refreshing! Cold and fruity lemonade…does it get any better?!
