Greek Salsa

Why is moving so stressful? Even though we had professionals do most of the packing and actual moving, there’s so many little things to think about, especially when you are moving out-of-state. Add children into the mix and it’s even more of a nightmare! Just going away for the weekend requires a carload of items, but when you are moving, it’s even more out of control. I wish I could just snap my fingers and have everything all unpacked and set up!

One of the biggest things I’m most excited about with this move is being closer to family and friends and being able to entertain more! This will give me plenty of good reasons to mix up yummy appetizers like this Greek Salsa! This Greek Salsa is the perfect summer appetizer. It’s light and flavorful with the perfect amount of crunch from the cucumber. Then you get a bit of saltiness from the feta cheese and olives.

Greek Salsa

This Greek Salsa is everything I love in a salsa. It’s chunky and so fresh! While I love eating it with pita chips, I also just love eating it straight up with a spoon! And like most salsas, you can also use this salsa as a topping for grilled chicken, fish, or even steak!

Homemade salsa with a Greek twist! This Greek salsa is made with crunch cucumber, tomatoes, feta, and olives. Serve with pita chips for a unique appetizer!

Ingredients

  • 2 cups quartered cherry tomatoes
  • 1 cup diced cucumber
  • 1/4 cup diced red onion
  • 1/2 cup chopped kalamata olives
  • 1/3 cup crumbled feta cheese
  • 1/2 lemon, juiced
  • salt to taste
  • pita chips

Instructions

  1. Add the diced tomatoes, cucumber, onion, olives, and the feta cheese in a bowl. Stir in the lemon juice and salt to taste. Serve or chill for 30 minutes before serving. Serve with pita chips.
