Can we talk about House Hunters for a second? We watch an episode or two every night before bed and it never ceases to surprise me just how weird people are. For example, there was a dude who wanted to be in walking distance to his church because he didn’t like wearing shoes and walks around BAREFOOT. In the street. To church. Not just around the house. Out in public. BAREFOOT.

Did I mention he walks around barefoot? No shirt, no shoes, BIG problem.

Then there was another dude who wanted an older house that had secret passageways. A grown man wants secret passageways. For what purpose? Creepy. Then at the end once he found his secret passageway house, he was playing his guitar in some dark, dusty, and dirty crawl space/closet. Nothing gets the creative juices flowing like dark and dirty closets.

I could totally be on the show. Sometimes I like to look at houses in random places online and I have things to say about every house. I know, could I be more lame? I’m not sure what my weird thing would be though. I’ll have to work on that.

What does this all have to do with cornbread? Absolutely nothing. There is nothing weird about cornbread.

Nothing screams fall like a bowl of chili. And is there anything that goes better with a bowl of chili other than cornbread? I think not. I’ve actually never made cornbread from scratch. I’ve only used the packaged stuff. For shame, I know. So I just mixed a bunch of stuff in a bowl and hoped it would come out good. Luckily, it did and now I will never buy the boxed mix again!

Easy Cornbread - Whip up this easy cornbread recipe in just 30 minutes! Perfect with a bowl of soup or chili!

Ingredients

  • 1 cup cornmeal
  • 1 1/2 cups flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2/3 cup buttermilk
  • 4 tablespoons melted butter
  • 1/3 cup sour cream
  • 2 large eggs

Instructions

  1. Preheat oven to 400 degrees. Spray an 8×8 baking dish with nonstick spray.
  2. In a large mixing bowl, stir together the cornmeal, flour, baking powder and soda, sugar, and the salt.
  3. In a separate bowl, mix together the buttermilk, melted butter, sour cream, and the eggs.
  4. Form a well with the dry ingredients and pour the wet ingredients in the middle. Stir together until just combined.
  5. Pour the batter into the baking dish and spread so it is in an even layer. Bake for about 20 minutes or until a toothpick inserted comes out clean.
