Truth: It’s perfectly acceptable to eat fruit pizza for breakfast, lunch, dinner, or even dessert because helloooooo, it’s made with fruit!

Last week I received a package from OXO that was packed with some of their fruit tools! They sent me a pineapple slicer, cherry pitter, strawberry huller, mango splitter, and a 2 piece fruit scoop set. I was so excited to get all of these tools, many of which I have had my eye on for a while! I couldn’t decide which tool I wanted to put to use first so I decided to try to use as many as possible. A fruit salad would just be too “regular”. A fruit pizza just sounded way better! So, I ended up using the mango splitter, strawberry huller, and one of the fruit scoops for kiwi. I think my favorite tool was the strawberry huller. I actually already had a different one and the OXO huller is so much better! It is so easy to use and gets those stems out so quickly!

With Memorial Day coming up this weekend, this sweet pizza would be perfect to bring to a BBQ! Not only is it tasty, but look how pretty it is!

Don’t be afraid to get creative with your pizza. You can really use whichever fruits and however much of each one that you want depending on the design you want to create. For Memorial Day (or the 4th), you can use strawberries, blueberries, and bananas or pineapple! Go nuts!

Prep Time: 30 minutes

Cook Time: 13 minutes

Total Time: 43 minutes

Yield: 8-10 slices

Ingredients

  • 1 lb. refrigerated cookie dough (or your favorite homemade recipe)
  • 1 8-ounce package low fat plain cream cheese, softened
  • 1 8-ounce reduced fat whipped topping (Cool Whip), thawed
  • 1 tsp. vanilla extract
  • 1 large mango, sliced into bite size pieces
  • about 8-9 medium to large sized strawberries, stems removed and sliced
  • 3 kiwis, skin removed and sliced
  • handful of fresh blueberries

Instructions

  1. Preheat oven to 350 degrees. Prepare a large baking sheet or a pizza pan with parchment paper or a silicone mat.
  2. Cut out two large squares of wax paper. Place one piece flat on the counter. Remove the sugar cookie dough from the package and place on top of the sheet of wax paper. Try to flatten a bit with your hands. Place the other sheet of wax paper on top. Use a rolling pin to roll the dough into a circle and to about 1/2 inch thick.
  3. Bake the cookie dough for about 11-13 minutes or until it is lightly golden. Let cool completely (While the cookie dough is baking, start slicing the fruit if you haven't done so already).
  4. In a large mixing bowl, beat together the cream cheese, whipped topping, and the vanilla extract until smooth. Once the cookie has cooled, spread the cream cheese mixture evenly on top of the pizza.
  5. Layer the fruit on top of the cream cheese to make your desired design.

Notes

This fruit pizza is best served the same day you make it. After a while, the dough begins to soften and the fruit is not as fresh and vibrant. If you want to get a head start the day before, you can bake the cookie dough and mix up the cream cheese mixture and cover and place in the fridge until ready to use. I would recommend slicing the fruit the same day you plan to serve the pizza!

Sorry for being a bad blogger. My mom and little brother came to visit us and we kept very busy. Although my husband and I have been here since October, we haven’t really gotten a chance to explore too much of Phoenix. If you follow me on Instragram, you probably saw a lot of touristy pictures this weekend. We certainly felt like tourists. We made it to an Indian’s spring training game, a cheesy ghost town, the Phoenix Zoo, and did some shopping. I’m kind of feeling like I now need a vacation from our little vacation. I decided not to open my computer while they were visiting. Sometimes it is nice to just step away from technology for a few days.

But now some of you might be thinking, “what the heck, Stephanie?” Where is our new recipes? Well, sorry, I am a slacker this week, what can I say? I’ll have something new for you guys later this week, but for now, let’s talk about Easter. I’ve collected some of my favorite recipes from my blog that you can make for your Easter brunch and for dessert! It’s kind of funny because we don’t do Easter brunch in my family. We are usually rushing out the door in the morning to get to church. We make homemade pasta and have linner instead. I love brunch though and I know many of you do as well so I hope that this gives you some good ideas for your Easter menu!

1. Pomegranate-Pear Champagne Punch – Swap out the traditional mimosa for this pretty little drink!

2. Challah Bread French Toast with Lemon Mascarpone – This french toast is easy to make for a crowd and the lemon mascarpone topping might be one of my favorite things that has ever happened.

3. Greek Yogurt with Warm Berry Sauce – Here’s another simple recipe for you. Just scoop some Greek yogurt into a serving bowl and top with this tasty berry sauce.

4. Peach Grapefruit Sangria – Sangria is not something you see too often on a brunch menu, but why the heck not?!

5. Low-Fat Spinach Cheddar Quiche with Oat Crust – I love this quiche so much. It tastes rich but without all the calories and how cute is it to serve in individual serving dishes? Your guests will love you for it.

7. Ham and Gruyère Crêpes – Crepes are another great option for brunch because you can stuff them with pretty much anything! You can also make the crepes the night before to help you save time in the morning.

1. Lemon Yogurt Cookies with Blueberry Frosting – These little cookies are fruity and are only 150 calories per cookie!

2. Vanilla Cupcakes with Strawberry Buttercream Frosting – Oh this frosting. I could sleep in this fluffy pink frosting!

3. Mikey’s Key Lime Pie – My brother made this for Easter last year and it’s so good! Certainly the best key lime pie I have had. This pie is perfect for spring!

4. Biscotti – Being Italian, biscotti is a family tradition for every holiday. I love biscotti because it’s not overly sweet which makes it great for dessert, but also perfect for dipping in your morning coffee with breakfast!

5. Italian Biscuit Cookies – These cookies are the epitome of Easter for me. These are another family tradition and my mom and I have been making them together for years. We always do pretty pastel frostings for Easter.

6. Grapefruit Brûlée – If you’re wanting something a little lighter to serve after a big meal, then look no further!

7. Strawberries and Cream Pie – This pretty little pie graced our Easter table last year as well and it pretty much has everything I love in a pie! Stuffed with strawberries and a creamy filling and then topped with streusel topping!

Bailey’s Irish Cream dark chocolate truffles. Oh Lord, help me. These are amazing. You must trust me on this one. Due to my crazy schedule as of late, this will probably be the only St. Patrick’s Day recipe I can get up, but at least it’s a good one, right?! And the best thing about these is that they are so rich and decadent, you won’t need to eat many to satisfy your sweet tooth!

Bailey's Irish Cream Dark Chocolate Truffles

The prep for these truffles is super easy. The hard part comes when you are ready to roll them. I don’t think I have ever made more of a mess in my life. Like ever. I highly recommend using a melon baller or a small cookie scoop for this. I had neither, so I used a 1/2 tbs. sized measuring spoon and I had a hard time getting the chocolate out of it. I wanted to really be able to taste the Bailey’s so I added about 4 tablespoons, but you can easily adjust this to meet your own taste. I went for dark chocolate because well, it’s my favorite, but you could also use milk chocolate or semi-sweet chocolate. Whatever you go with though, don’t skimp on the quality. I think the quality of the chocolate really makes a difference with these. And how great would this be with different liqueurs? Experiment away!

Bailey’s Irish Cream Dark Chocolate Truffles

Prep Time: 10 minutes

Yield: makes about 25-30 truffles

Ingredients

  • 3/4 cup heavy cream
  • 10 oz. good quality dark chocolate
  • 3-4 tbs. Bailey's Irish Cream
  • sprinkles, nonpareils, cocoa powder

Instructions

  1. In a small saucepan over medium heat, heat the heavy cream until it is heated through.
  2. In a mixing bowl, add the chocolate. Pour the heated heavy cream over the chocolate. Whisk together until the chocolate is completely melted. Stir in the Bailey's Irish Cream. Cover and refrigerate for a least 2 hours, but preferably overnight.
  3. Lay out a sheet of wax paper on the counter. Using a melon baller or small cookie scoop, scoop out about 2 tsp. of the chocolate at a time. Roll the chocolate into a ball and dip into desired toppings such as sprinkles or cocoa powder.* (see note)
  4. Store the truffles in the fridge until ready to serve.

Notes

If you choose to use your hands to shape the truffles, I recommend rubbing some oil on your hands to help keep the chocolate from sticking to your hands. The easiest way to do this is to cover your hands in cocoa powder and then roll, however, if you do it this way, you won't be able to use sprinkles.

Valentine’s Day always makes me miss being a kid. I used to love going to the store to pick out cards to hand out in class. I usually went for ones that had a Disney princess or the girliest ones I could find. I remember giving the “coolest” cards to my closest friends. Valentine’s Day at school was always kind of a waste of a school day. Decorating bags or boxes to hold all of the cards, and then of course came all the treats and candy. And then of course, it was always fun to go through cards. It always sucked when someone else gave out the same cards as you did.

These red velvet rice krispie treats are perfect to bring to a school party, but also perfect to enjoy with a glass of champagne! I love the look of the pink candy melts drizzled on top, but you can also use white chocolate (but, you guys know how I feel about that…). Oh, and then sprinkles. Sprinkles are a must.

Yield: about 18 treats

Ingredients

  • 3 tbs. unsalted butter
  • 1 (10 oz.) bag mini mashmallows
  • 1 cup red velvet cake mix
  • 6 cups Cocoa Krispies cereal
  • pink candy melts or white chocolate (for drizzling on top)
  • sprinkles (optional)

Instructions

  1. Prepare a 9x13 baking dish with parchment paper or spray with non-stick spray.
  2. In a large pot, melt the butter over medium heat. Pour in the marshmallows and stir constantly until the marshmallows are melted. Mix in the red velvet cake mix.
  3. Pour in the cereal and mix until it is well-coated with the marshmallow mixture.
  4. Pour the mixture into the baking dish. Using greased hands, spread and press down with your hands.
  5. Melt some pink candy melts or white chocolate in the microwave and drizzle on top. Add sprinkles if desired.
  6. Let the treats dry for about 2 hours before cutting.

The typical beverage of choice for most people during the Super Bowl is beer. But, not for me. While watching the game last week, I was sipping on some of this pomegranate-pear champagne punch. I guess I just like to be fancy. And also, it was Sunday, which is my day for cooking and photographing everything for the blog, but whatever. Oh, and like always, I don’t want to drinks to go to waste, so I end up drinking both of them in the middle of the afternoon. I have no tolerance anymore and so then I fell asleep. I am so lame.

We don’t have any big plans for Valentine’s Day. I think since we have been together, we have only attempted to go out on Valentine’s Day like maybe once. We hate crowds so we are going to do what we always do for special days: Sit at home in PJ’s, eat a lot of fondue, and probably watch more Bones on Netflix. We are out of control!

I love pom juice, but I think my favorite part about this drink is the pear nectar and of course, the pretty pink color! This punch fruity and addicting! I think I will fancy things up this V-Day by mixing up more of this punch! Nothing says Valentine’s Day and romance like a glass of champagne, am I right?!

Ingredients

  • 1 1/2 pomegranate juice
  • 1 cup pear nectar
  • 1/4 cup orange-flavored liqueur (like triple sec)
  • 1 bottle (750 ml) champagne

Instructions

  1. In a pitcher add in the pomegranate juice, pear nectar, and the orange liqueur and stir together. Slowly pour in the champagne. Chill before serving or serve over ice.

Red velvet pancakes. Red velvet anything is pretty much one of my most favorite things in this world. And although it is totally cliche, red velvet screams Valentine’s Day. And what perfect way to start the day of love than with these pancakes?

When I first made these, I actually thought they could use more of a chocolatey taste. I think next time, I might add a handful of chocolate chips to the batter. Because, you know, these aren’t already over-the-top as is. The cream cheese glaze is so perfect on these and I found that a little goes a long way! If these weren’t so right, it kind of seems wrong to eat something so decadent and wonderful for breakfast!

Ladies, these are totally breakfast-in-bed material. To get your significant other to make them for you, just leave this page open on your computer for a while so they see it. You know, like the same thing we can do when we want expensive jewelry…

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 4 servings

Serving Size: 2 pancakes

Ingredients

    For the pancakes:
  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 eggs, beaten
  • 1 cup buttermilk
  • 1 tsp. vanilla extract
  • 3 tbs. red food coloring*
  • semi-sweet chocolate chips (optional)
  • For the cream cheese icing:
  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar, sifted
  • milk

Instructions

  1. In a large bowl, mix together the flour, salt, baking powder, baking soda, and cocoa powder.
  2. In a separate bowl, mix together the eggs, buttermilk, vanilla, and the food coloring.
  3. Make a well in the center of the dry ingredients, pour in the wet ingredients and fold together until well-combined, but try not to overmix. Stir in the chocolate chips (if using).
  4. Heat a fry pan on medium heat (or use a griddle). Spray the pan with non-stick spray, or add a pat of butter. Pour about 1/4 cup of the pancake batter into the pan. Cook on one side for about 2 minutes, then flip and cook for another 2 or until the pancake is fully cooked. Continue this process with the remaining batter.
  5. To make the icing, beat together the cream cheese, sifted powdered sugar. Add in milk, one tablespoon at a time, and mix until the icing reaches your desired thickness (I did about 2-3 tbs.).
  6. Drizzle some of the icing over the pancakes and serve. Garnish with fruit, nuts, butter, or a sprig of mint.

Notes

In regards to the food coloring, you can also use gel food coloring, in which case would require less than regular liquid color.

Chocolate Caramel Blossoms

Too…many…cookies….

I’m not sure I can eat another cookie right now. I know, I sound like a crazy person, but I just can’t eat any more for a while…maybe for like 3 days or something.

But, before I start my cookie hiatus, I have to tell you about these cookies first. Earlier this week, I told you I don’t like peppermint. Today, I am going to tell you that chocolate and caramel are two of the greatest things in the universe. Yup, the universe.

So I am not going to waste any more time and will go straight the recipe. Hubs and I are off to Ohio to spend Christmas with my family. And yes, we are driving. Why? Because we hate ourselves. And also, plane tickets were out of control.

Chocolate Caramel Blossoms

Prep Time: 20 minutes

Cook Time: 12 minutes

Total Time: 32 minutes

Yield: About 16 cookies

Ingredients

  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar plus 1/4 cup
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp. instant espresso (optional)
  • about 16 Hershey's caramel kisses (chilled in the refrigerator or the freezer)

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, cream together the butter and 2/3 cup sugar. Mix in the egg and vanilla extract.
  3. In a separate bowl, mix together the flour, baking powder, cocoa powder, salt, and espresso powder.
  4. Mix the dry ingredients in with the wet ingredients until well-combined.
  5. Prepare a cookie sheet with parchment paper or a baking mat. Place the remaining sugar in a small bowl. Using your hands, roll the dough into 1-inch balls (about 1 tablespoon). Roll each ball into the sugar until lightly coated and place on the baking sheet about 1-2 inches apart.
  6. Bake cookies for about 10-12 minutes. Remove from the oven and let the cookies cool for about 2 minutes. Place a kiss in the center of each cookie and press down gently.

Gingerbread Martini

Everyone has a certain flavor that reminds them of Christmas. For some it’s eggnog, for which I am still just not so sure how I feel about. For others, it’s peppermint.

Speaking of peppermint, I have a confession. I think it’s time I come clean about something. We’re all friends here, right?

Ok, here it goes…I don’t really like peppermint.

I know, I’m sorry. Please don’t throw garbage at me. I don’t HATE it, I just don’t really care for it. I only like mint flavor in a few things: toothpaste, gum, tea, mouthwash, mint chip ice cream, and..well, that’s about it. I don’t like peppermint bark either. This is also because it contains white chocolate, which, by the way, I really do hate.

My favorite Christmas flavor is gingerbread. I’ll skip the peppermint, just give me the gingerbread. In all forms. Cookie, latte, and now, martini. And just a warning, this thing is dangerously addicting. The gingerbread syrup is really where it’s at with this drink, so add as much or as little as you like. I kind of want to pour the syrup on everything though.

Gingerbread Martini

Prep Time: 15 minutes

Yield: 2 martinis

Ingredients

    For the gingerbread syrup:
  • 1/2 cup water
  • 1/2 cup brown sugar
  • 4 tbs. molasses
  • 1 tsp. ground ginger
  • 1/2 tsp. ground cinnamon
  • For the martini:
  • 2 ounces vanilla vodka
  • 1.5 ounces Kahlua
  • 1.5 ounces Bailey's Irish Cream
  • 3 tbs. gingerbread syrup (or to taste)
  • 2.5 ounces half and half (plus about 2 tbs. for the rim)
  • gingerbread cookies (for the rim and for garnish)(I like Pepperidge Farm)
  • whipped cream (for garnish)

Instructions

    For the syrup:
  1. In a small saucepan, heat the water, brown sugar, molasses, ginger, and cinnamon on medium heat until the sugar dissolves (about 5 minutes).
  2. For the martini:
  3. Crush about 2-3 small gingerbread cookies in a zip lock bag with a rolling pin. Place the crumbs in a saucer and set aside.
  4. Pour the 2 tablespoons of half and half into a small saucer. Dip the rims of the martini glasses into the half and half. Then dip into the gingerbread crumbs and set the glasses aside.
  5. In a cocktail shaker filled with ice, combine, the vodka, Kahlua, Bailey's Irish Cream, gingerbread syrup, and the half and half. Shake well and pour into martini glasses. Place a dollop of whipped cream on top and then place a gingerbread cookie on top of the whipped cream and serve.

Notes

- If you can't find gingerbread cookies, you can also use gingersnaps or Biscoff cookies.

I have been meaning to buy myself one of these and haven’t gotten around to it so it is also my list! It would be really useful for soups! And they come in such fun and pretty colors!

I’m really horrible with conversions. Like, the worst. So, how freakin’ cool and handy would this dishtowel be?!

5. Herb Keeper: $20 at Uncommon Goods

Though I have been meaning to plant my own herbs at my new place, I haven’t gotten around to it, so I am still buying them from the store. I really hate when I buy herbs, only need a little, and then basically have to throw the rest away because I can’t get to them fast enough. This little herb keeper would be great for making them last longer!
