Low-Fat Buffalo Chicken Bites

With less than a week to go until the Super Bowl, I thought I would share a couple of recipes this week that you can make for your parties! Now, I have to admit that I could give two craps about the Super Bowl. Just not into it. But, any excuse to get together with friends and eat a bunch of food sounds good to me! And hey, at least the commercials are fun! You’ve heard me say before that my darling husband is a buffalo chicken fanatic. I have a few buffalo chicken recipes in my arsenal, but I wanted to make something new that was more of an appetizer. These buffalo chicken bites did the trick! They were tasty, easy to make, and low in fat! You should totally add these to your Super Bowl menu!!

Low-Fat Buffalo Chicken Bites

Prep Time: 25 minutes

Cook Time: 25 minutes

Total Time: 50 minutes

Yield: Serves 4-6

Ingredients

  • 3 cups cooked chicken, shredded (I used rotisserie chicken)
  • 3 ounces fat-free or reduced fat cream cheese, softened
  • 3/4 cup reduced fat shredded cheddar cheese
  • 1/4 to 1/2 cup buffalo wing sauce (depending on how much buffalo flavor you want)
  • 1 cup whole wheat flour
  • 4 eggs, lightly beaten
  • 3 cups panko bread crumbs
  • Optional: 1/4 cup green onion, sliced

Instructions

  1. Preheat oven to 350 degrees. Prepare a large baking sheet with a baking mat or parchment paper. In a large bowl, combine the chicken, cream cheese, cheddar cheese, and the buffalo sauce (and onion, if using).
  2. Add the flour, eggs, and panko to three shallow bowls. Take the chicken mixture and roll into 1 1/2-2 inch balls (I made mine way too big, they were more like 3 bites!). Roll each ball in the flour, then the egg, and then the panko. Place on a baking sheet and spray around each ball with olive oil spray (this helps brown the panko crumbs) and bake for about 15 minutes, then turn the balls over and bake for another 5 or 10 minutes until they are golden brown. Serve with ranch or blue cheese dressing for dipping!!

    The blend of flavor ingredients does make my mouth water and that picture has a great influence also! Definitely worth trying, especially since they do not have all the fat like most appetizers.
    Superbowl to me is not all that either, but I am sure friends and great food can really make it fun. Happy Monday!

    Wow.. this is a keeper!!! Really fun recipe. When I first saw the title and picture I thought they were like chicken nuggets and then when you said use shredded chicken… I got it. It’s like a buffalo chicken dip in a crispy nugget. Brilliant!! Have a great week! ~ Ramona

    I keep getting more and more good ideas for the Super Bowl. I actually have to travel during the game for work but I plan on having all of the good eats on Saturday!

    What a great idea! It is kind of like a crab cake, only with chicken and buffalo! How fun, and anything with buffalo sauce is great for game day!

    Stephanie….these look awesome! My younger son is huge ‘buffalo anything’ fan. So these sound perfect. And while I love buffalo wings….I’m happy to do without the bones! I’m not a football fan at all. But my boys are….so I think I will give these a try next weekend! : )

    What a great idea! I’m not into the Super Bowl either and the only reason it matters to me is for the same reason you said, it’s an excuse to get together with friends and eat for a few hours. I love these bites, but I would probably eat them all by myself, which would defeat the low-fat part :)

      Hey Katie, if you make each bite about 1 1/2 inches, you will get around 45 pieces. If you make them a little bigger, you may get closer to 30. Hope that helps!

    I’ve had this marked to read for what seems like forever to me…. They look amazing, & I cannot wait to make them for my next girl’s night! They remind me of a certain appetizer from Chzcake Factory that we always get, It’s called buffalo something, and they’re are pure evil. These look like a much better alternative, thanks Steph!
