Hi Friends! I still have the plague. It’s awful. All I want to do is sleep! But, my mom made this banana cream pie for New Year’s dessert and I wanted to share her recipe with you! My stepdad loves banana cream pies. It’s his pie of choice for all holidays and I can see why because it is quite tasty! Now, I hate to be short, but I am finally back in my own apartment and my bed and a box of NyQuil are calling my name!
Banana Cream Pie
Ingredients:
– 3 cups whole milk (yes, use whole milk!)
– 3 tbs. cornstarch
– 1/2 tsp. salt
– 2/3 cup sugar*
– 3 egg yolks
– 1/4 cup butter
– 1 1/2 tsp. vanilla extract
– 3 medium bananas
– 1 lemon, juiced
– 1 prepared pie crust
Directions:
1. Heat first 4 ingredients in a saucepan until it just barely starts to bubble. In a large bowl, lightly beat egg yolks. Add the mixture from the pan into the bowl very slowly (so that the eggs don’t cook). Return the mixture to the pan and heat for approximately 3 minutes on medium heat, stirring constantly, boil slowly. The mixture will thicken. Add the butter and vanilla extract and whisk until fully incorporated. Remove from heat and let cook completely.
2. Place your pie crust into a pie pan and bake according to the packaged directions until the crust is a light brown. Slice the bananas and arrange in a single layer along the bottom of the pie crust. Then top with the cooled custard mixture. Top with homemade whipped cream or cool whip. Store pie in the fridge until it is ready to serve.
Notes:
- I recommend serving this pie the same day or the very next day after it has been made. The longer you wait, the browner the bananas get and the less appetizing it becomes!
- You can cut down the sugar to a 1/2 cup if you would prefer less sugar and the pie will still come out great!

I hope your bed/NyQuil are working their “feel better” magic! Being sick after the holidays is the worst (well actually I guess there is no good time to be sick.) The pie looks wonderful though. I haven’t had a slice of banana cream pie since I was a kid and my grandmother used to take us to this little restaurant that was usually only filled with elderly. Anyway, that pie looks just the way I remember the one at the restaurant. I hope you feel better soon!

This is a delicious reminder that bananas are available all year round, so this pie does not have to wait for summer. Tropical food in the winter can sure chase the dreariness of the weather away. Tasty sweet treat-Yum!

Hi Stephanie, so sorry to hear you’re still down with the plague… not fun at all! On the upside, how fantastic is this banana cream pie?? (I have a weakness for such) and am glad you mentioned the sugar thing – I often play around with it because, I agree, you can still get great results without as much. It looks so fluffy delicious! I’d forgotten all about banana cream pie. My mother used to make this from the boxed pudding. We loved it as kids. I hope you’re feeling better!

I can hardly believe I’m admitting this, but I don’t think I’ve ever had a cream pie. Clearly, there hasn’t been enough pie happening in my world (and I think my husband would agree with this…it’s his favorite.) This is definitely a great recipe to kick it off with! Hope you are feeling better soon
